Game Cookery

We are now at the end of the season, and what a season it has been. The weather hasn’t been great, with most of our shoots being rather wet affairs. However, plenty of decent bags have been obtained.

This is my quiet time so I like to make preparations for the freezer. I breast a lot of birds, take out the thighs and freeze a few birds whole.
