No-Bake Passionfruit & Gingernut Slice
PREP + COOK TIME 35 MINUTES + CHILLING MAKES 24 SERVES
• 2 x 250g packets gingernut biscuits
• 1 cup desiccated coconut
• 150g butter, melted
• 395g canned sweetened condensed milk
• passionfruit pulp, to serve (optional)
PASSIONFRUIT FROSTING
• 25g butter, soft
• 125g cream cheese, soft
• 200g icing sugar
• pulp of 3 passionfruit, sieved to remove pips
1 Grease and line a 20cm X 30cm lamington pan so the paper overhangs on all sides.
Crush biscuits to crumbs using a processor or by pounding in a sturdy bag with a rolling pin. Pour crushed biscuits, coconut, butter
