Feel-good favourites

Never was the motto ‘be prepared’ more appropriate than when it comes to feeding the whānau wholesome, delicious food. These mains and sides are easy to rustle up and include a good portion of veges, protein-rich foods, some smart carbs and essential fats (plus a yummy, not-too-naughty dessert for good measure) to keep your family happy, well-fed and healthy.

Tamari lamb skewers

Ready in 35 minutes | Serves 4

400g lamb backstraps
50ml red wine vinegar
2½ Tbsp extra virgin olive oil
1½ Tbsp tamari or light soy sauce
1 tsp Dijon mustard
½ tsp ground black pepper
Ready-shredded vegetables, to serve
Wholemeal tortillas, warmed, to serve
Lime wedges, to serve

1 Soak 8 bamboo skewers in water for 10 minutes. Cut the lamb backstraps into 3cm cubes and thread onto the skewers. Place the lamb skewers in a glass dish.

Combine vinegar, oil, tamari or soy, mustard and pepper. Pour over lamb and leave to marinate for at least 15
