SALMON PAPPARDELLE
SERVES 2
✣ A little rapeseed oil or olive oil, for frying
✣ 2 onions, sliced
✣ 2 garlic cloves, finely sliced
✣ 175ml (6fl oz) white wine
✣ 150ml (5fl oz) fish stock
✣ 100g (3½oz) asparagus, cut into bite-sized pieces
✣ 100g (3½oz) smoked salmon, sliced into ribbons
✣ 150g (5oz) dried pappardelle
✣ Parmesan, grated, to taste
