Easy curries

IN THEIR first cookbook, Temptations, former TV and radio presenter Prim Reddy and restaurant partner Niranj Pather, who are both South Africans of Indian descent, entice readers with recipes for spicy, exotic cuisine that’s quick and easy to prepare. The dishes include local Indian cuisine and South African favourites such as braai, as well as a vast array of dishes encountered on their travels.

BUTTER BEAN AND POTATO CURRY

Butter beans in tomato sauce cooked in a delicious mild curry with the softest potatoes . . . yum! This might be a simple dish, but I can assure you that everyone will enjoy tucking in.

Serve it in a bunny chow over saffron rice or on its own.

I like to eat it with a traditional carrot salad.

125ml (½c) olive oil
4 cinnamon sticks
5ml (1t) cumin seeds
