Refrigerator Cookie Recipes - Meallá H Fallon
Just mix, roll, refrigerate, slice and bake
Easy Slice and Bake Cookies
These cookies are also known as icebox cookies or slice and bake cookies.
Almond Cherry Refrigerator Cookies
Ingredients
250 g butter
2 eggs
300 g sugar
600 g flour
10 ml baking powder
3 ml salt
100 g red glace cherries (chopped)
50 g almonds (chopped)
5 ml almond extract
Method
Cream the butter and eggs together until light and creamy.
Add the sugar, flour, baking powder and salt.
Mix well.
Add the cherries, almonds and almond extract.
Mix well.
Roll the dough into a sausage shape.
Cover the dough in plastic wrap.
Refrigerate for 60 minutes.
Remove from the refrigerator and cut into 5 mm slices.
Place the slices onto a greased baking sheet.
Bake at 180 degrees C for 15 to 20 minutes.
Remove from oven and cool on a wire rack.
