    Health and cooking are two of my passions, but there are just times when I am tempted to give in to make way for some misguided sense of practicality. It is so easy to order out or heat pre-packaged meals, especially after a long day at work. When you had to do extra hours at work, and you survived one of the longest traffic jams on your way home, the first thing I can think of is food, and the last thing I want to do is cook.

    I will not lie that despite my decision to eat and live healthily, there are just those days that I had to cheat on my meals just to crash on my bed as soon as I could. Those cheat days were over when I was blessed to raise my family. I am no longer preparing and cooking dishes not only for my own but also for my family. This meant that I had to make better use of my time and better choices. I had to find a way to save on time without sacrificing health and most importantly for me, taste and flavors that make cooking so rewarding.

    I found the answer with one-dish meals! I came across the idea of one-dish meals from my one of my team at work. A one-dish meal represents a full meal, which includes a balanced proportion of carbs, fats, and proteins. These essentials can come from meats, vegetables, dairies, and fruits.

    At first, I thought that these dishes would be too complicated or too busy to make, but the idea of these all-in-one dishes piqued my interest. Then I discovered that with a few tweaks here a couple of adjustments there, my all time favorite meals could already become one-dish recipes.

    Author’s Note: I had an extra stash of cashew nuts in the fridge, and since I had to do my monthly cleaning of the fridge, I wanted to make good use of it. This all in one meal is sure to be a hit with family and friends.

    Ingredients

    1 lb chicken breasts, skinned, deboned and cut into strips

    1 cup chicken broth, low sodium

    ½ cup cashews

    2 onions, wedged

    ¼ cup onions, thinly sliced

    1 cup chow mein noodles, coarsely broken

    2 cups brown rice, cooked

    1 cup carrots, sliced

    1 cup celery, sliced

    2 cups bok choy, sliced

    6 cloves garlic, minced

    ¾ cup sweet pepper, chopped

    2 tbsp ginger, grated
