Braised lentil, fennel & sausage casserole

(This recipe produces the most delicious sausages I’ve ever cooked. It’s a basic, everyday food made more nutritious and economical through being paired with pulses, vegetables and wholesome broth — RR.)

Serves 4. Gluten-free, dairy-free.

½ cup2 cups (500 ml) chicken stock or bone broth1 garlic bulb, peeled and separated into individual cloves2 T extra virgin olive oil1 onion, chopped1 large fennel bulb OR 2 celery stalks, chopped1 t fennel seeds or ground fennel6–8 good-quality pork sausages, approx. 600g1 cup/250 ml roasted tomato sauce OR400 g can chopped tomatoes2 t apple cider vinegar salt and cracked pepper chopped fennel fronds or parsley
