First dish :cheese with honey ( a recipe from Crete)

Ingredients for 15 persons

1500 gr Greek cheese called Feta


6 leaves of crust
100 gr sesame
400 gr olive oil for frying
200 gr honey

We cut the cheese into rectangular pieces, 100 gr each. We wrap the pieces
in the leaves of crust. We fry them for a few minutes. We serve them with
some sesame and honey on.

Second dish: souvlaki with pork and vegetables

Ingredients for 15 persons

2 kilos pork meat into small pieces


3 zucchinis
2 eggplant
3 onions

3 tomatoes
2 green peppers
50 gr olive oil, 1 lemon and a few oregano, pepper and salt
30 wood sticks for souvlaki

We cut the vegetables and pass them, mixed with the pieces of meat,
through the sticks (i.e. one piece of meat , one piece of vegetable. We put
them into a large pan and drop the oil, salt, pepper, oregano and lemon juice.
We bake the souvlaki for an hour. We serve them on bread with yogurt sauce.

Yogurt sauce.
We mix 300 gr of fat yogurt, 4 spoons mayonnaise, 2 spoons olive oil, and 3
melted pieces of garlic.

Third dish:1. pasta flora with home made fruit / sweet of quince

1 cup of butter
1/3 cup sugar
3 cups of flour
2 yolks
1 spoon of baking power
Half spoon of vanilia
One jar of fruit- sweet

We mix the butter and the sugar and we throw the yolks one by one. We stop
and put the flour into the mix and start mash it. We separate the 1/3 of the
dough and we make strips with it. We put the rest of the dough in a small pan
and stretch it ,we spread the home made fruit-sweet of quinces . We put the
strips and bake it 45 minutes.
Semolina halva

Ingredients

1 cup of butter
cup of almonds, peeled off and cut in half
500 gr semolina
4 cups of sugar
1000 ml hot water
cup of raisins
cinnamon

In a casserole we put the butter.


When gets hot we add the
semolina and stir on low
temperature, until it starts turning
yellow. We add the almonds and
keep on stirring. When the
semolina turns brown we add 3
cups of sugar. We stir until the
clots and then we add the rest of the sugar and the raisins. In about 1-2
minutes we take the casserole off the fire, cover it with a towel and let get
cold. We put cinnamon on it and we serve it.
