Holiday Giving Opportunity

This year we have chosen a very deserving family for our giving efforts. Gina Furness is a single mother with 2 daughters at home. She has had a very hard year. Recently she was diagnosed with Crones Disease and told she may never be able to work a normal job again. She also in the last year has lost her son to a freak skateboarding accident. Still she is the most positive person I know. She always has a kind word or some sort of encouragement for the people around her. She currently works as a housekeeper/ nanny and is wonderful with children. Still she works so hard and can't quite make ends meet. Her daughters are 12 and 16 and both very good students and good kids. The family enjoys playing board games and watching wholesome movies together. There are many things they really need here is a list of ideas. If you see ** to the right of an item, it means someone has purchased one or more of these. Please refer to the Evite for details. :

Book Club
The next book club selection will be The Guernsey Literary and Potato Peel Pie Society by Mary Ann Shaffer and Annie Barrows.

"The Guernsey Literary and Potato Peel Pie Society begins in January 1946, when popular author Juliet Ashton, much like her fellow British citizens, is emerging from the dark days of World War II. As Juliet exchanges a series of letters with her publisher and her best friend, readers immediately warm to this author in search of a new subject in the aftermath of war. By the time Juliet receives an unexpected query from Dawsey Adams, we are caught in a delightful web of letters and vivid personalities and eager for Juliet to find the inspiration she seeks."
There are several available copies of this book at the Eugene Public Library to check out. Contact Kim Jenkins with any questions. Where: Sweet Life Patisserie When: December 5, 8:00-10:00 pm

Handprint Cookies (from marthastewart.com)

Older children can use their hand to outline the cookies, drawing around it on the dough with a skewer and using a knife tip to cut along the line. If your child can't participate, make a pattern from a manila folder. Translucent parchment works well for the heart stencil; it will allow you to see the shape of the cookie through it.

Yield: Makes 8 to 10 cookies Ingredients For Dough 2 cups sifted all-purpose flour, plus more for dusting 1/4 teaspoon table salt 1/2 teaspoon baking powder 8 tablespoons (1 stick) unsalted butter 1 cup sugar 1 large egg 1 teaspoon pure vanilla extract, for decorating

Slow-Cooker Pesto Spinach Lasagna

(from crockpot365.blogspot.com. Recommended by Kami Hendrix) Ingredients: 1 (26-ounce) jar prepared pasta sauce 1 (10-ounce) box lasagna noodles (I like tinkyada brown rice) 1 (11-ounce) container pesto (or by all means, make your own!) 1 (15-ounce) container ricotta cheese 1 (12-ounce) bag baby spinach 1 cup grated Parmesan cheese 16 ounces mozzarella cheese, sliced 1/4 cup water Directions: Use a 4 quart slow cooker. Put a spoonful of pasta sauce (about 1/4 cup) into the bottom of your cooker and swirl it around. Add a layer of uncooked lasagna noodles (you're going to have to break them to make a layer). Smear ricotta cheese and pesto onto the noodles. Add a handful or two of baby spinach, and top with a layer of Parmesan and slice mozzarella cheeses. Repeat layers until you've run out of ingredients. The spinach is fluffy, so you're going to have to squish it down to make it all fit. Before closing the pot, put 1/4 cup of water into the empty pasta sauce jar and close and shake. Pour this saucy water over the top of everything.

For Decorating 1 large egg white 1 teaspoon water Sanding sugar Directions 1. In a large bowl, sift together flour, salt, and baking powder. Set aside. 2. In the bowl of an electric mixer fitted with the paddle attachment, beat together the butter and sugar on medium speed until fluffy, about 3 minutes. Add egg, and beat until smooth, about 1 minute. 3. Add reserved flour mixture, and mix on low speed until thoroughly combined. Stir in vanilla. Wrap dough in plastic, and refrigerate for about 45 minutes. 4. Make cookie pattern and heart stencil while wrapped dough is

chilling. For the pattern, have your child trace his or her hand on a manila file folder, and cut out the tracing. You will lay this on the dough and trace around it with the tip of a paring knife. For the heart stencil, cut a heart shape from a piece of parchment paper, discarding center. 5. Preheat oven to 325 degrees. Line 2 baking sheets with parchment paper. On a well-floured work surface, roll out cold dough to 1/8 inch thick. Cut out hand shapes. Transfer cookies to prepared baking sheets. Refrigerate until firm, about 15 minutes. Dough scraps may be re-rolled twice. 6. To decorate the cookies with sanding sugar hearts, lay the heart stencil over a cookie. Combine the egg white with the water in a small bowl. Brush the egg wash in the heart, and sprinkle with sanding sugar. Lift stencil and repeat with remaining cookies. Bake until edges just begin to brown lightly, 8 to 10 minutes. Let cookies cool on pans for 3 minutes before transferring to wire racks to cool completely.

Now cover up and cook on low for 6 hours, or on high for about 3 to 4. You'll know it's done when the top layer begins to brown and the cheese is melted and bubbly. It will also pull a bit away from the sides. Tastetest a noodle to check texture. Uncover, and let it sit for 10 to 15 minutes before serving.
