CHICKEN FRIED STEAK GRAVY


3 T flour 1 c chicken broth c milk dash of Worcestershire sauce dash of hot sauce Drain off drippings, reserving 3 T in skillet. Add 3 T flour, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add broth and c milk; cook over medium heat, stirring constantly until thickened and bubbly. Stir in sauces. Yield: 4 servings.

FRIED CHICKEN GRAVY


c flour 1 c milk 1 c water salt and pepper to taste Carefully pour off grease from skillet, leaving all the crusty bits in bottom of pan. Combine water and milk; add all at once to skillet; blend well. Cook, over medium heat, stirring constantly with wooden spoon in figure 8 motion until mixture is thickened and bubbly and has a smooth and velvety consistency. Add salt and pepper to taste.
