Bruschetta Pasta With Shrimp

1 cup plum tomatoes, diced 1 tablespoon olive oil (divided use) teaspoon garlic, minced (divided use) teaspoon salt teaspoon pepper 24 medium shrimp 1 pound bow-tie pasta 1 cup pesto Just add garlic toast to Bruschetta Pasta With Shrimp, and you have a nice Italian meal. View larger Put tomatoes, 1 teaspoon oil, teaspoon of the garlic and the salt and pepper in a bowl. Toss to coat. Heat remaining 2 teaspoons oil in a large nonstick skillet; add shrimp and remaining teaspoon garlic. Saut 2 minutes or just until shrimp are cooked through. Remove from heat. Prepare pasta according to package directions. Add tomato and pesto to the pasta. Stir in the shrimp. Serves 4.
