Oktoberfest Soup 3 cups homemade beef or chicken stock 2 Oktoberfest sausages (I used the pre-cooked ones.

) 1 small onion, diced small 1 clove garlic, minced salt and freshly ground pepper to taste 1 cup kale, chopped 1/2 can mushroom pieces 1/2 cup heavy cream Skim beef or chicken fat from broth, simmer in sauce pan. Thaw sausages in micro wave, then dice. Sautee sausage, onion, and garlic in sauce pan. I added a gener ous amount of freshly ground pepper at this point. Add stock. Bring to a simmer, add Kale and mushrooms. Simmer until kale is as soft as desired. Add cream, hea t through. Probably would have been nice with a pile of grated cheddar on top, but I didn't think of that until after. Makes 4 filling servings. I plugged my version into fitday, but note that I used a generous amount of fat when I made my beef stock. 3 Tbsp, to be exact. 376 calories, 34 g fat, 10 g protein, 7 g carbs - fiber = 6 effective carbs
