Four cheese gnocchi

This is a real classic of the Italian cuisine and one of my favorite dishes. It takes a little time to prepare them but they are easy to make. Ingredients for gnocchi: 2 potatoes 1 egg 2 cups flour salt Preparation: Put a large pot of salted water to start boiling. Peel potatoes and add to pot. Cook until tender, about 15 minutes. Drain, cool and mash with a fork or potato masher. Add the flour, egg and a pinch of salt. Mix until you have a nice ball of dough. Shape small portions of the dough into long "snakes". On a floured surface, cut "snakes" into pieces about 1.5 cm long. In a pot with boiled water drop in the gnocchi carefully and cook for 3 to 5 minutes or until gnocchi have risen to the surface. After that remove them with a slotted spoon and set them in a strainer to drain off the excess water.

Ingredients for cheese sauce 2 spoons heavy cream 2 spoons butter 1/2 cup grated Parmesan cheese 1/2 cup grated Mozzarella cheese 1/2 cup grated Gorgonzola cheese 1/2 cup grated Ricotta cheese Preparation: In a medium saucepan put the butter to melt and add the cream. Gradually stir in grated Parmesan cheese, grated Mozzarella cheese, grated Gorgonzola cheese and grated Ricotta cheese. Reduce heat to low, and continue to stir just until all cheese is melted. Add the cooked gnocchi to the cheese mix well and serve immediately.

NOTES:

You can serve gnocchi a lot of different ways. Other sauces that go well with gnocchi are tomato sauce, bolognese sauce and pesto sauce. Dont use red potatoes. The gnocchi can be prepared ahead of time and then stored in the refrigerator for a few hours if necessary. Then all you need to do is cook them at meal time.
