Rooster with Greek Traditional Pasta (Chylopites)

Ingredients:
2 kilos of rooster, cut in serving portions
500 gr Greek traditional pasta (Chylopites)
2 medium sized grated onions
5 ripe tomatoes, grated
1 cinnamon stick
5-6 black peppercorns
1 cup of olive oil
salt

Preparation:
1. In a large pot heat the olive oil over medium-high heat,
add the portions of rooster and saute on all sides, until almost golden brown.
2. Add the onions and saute for 3-4 minutes.
3. Add the grated tomatoes, the cinnamon stick, the black peppercorns, and
the salt.
4. Stir for 2-3 minutes, pour into the pot 3-4 cups of warm water and boil for
3-4 minutes.
5. Place the lid on, turn down the heat and cook the rooster in medium-low
heat for about 1 and a half hour until tender.
6. When the rooster become tender, remove it from the pot and add the pasta
into the pot and boil until cooked (pour same warm water if needed).
Add the rooster and boil together for 2-3 minutes.
7. Serve the pasta on a platter and top with the rooster.
(sprinkle with grated cheese if you want).
