Create your own Frittata

A Frittata is similar to an omelet except a broiler is used to cook the top part of the egg mixture You may choose from the following ingredients for your frittata: Meat: Ham Choose 3 vegetables: Onions, red pepper, 4 mushrooms, celery stalk, 1 green onion 1 clove garlic. 50 ml grated cheddar 10 ml grated parmesan 30 ml water + 5 ml milk powder 5-10 ml margarine or oil 3 medium eggs Herbs (basil, oregano, thyme, rosemary, etc.)

Method: 1. 2. 3. 4. 5. Wash and chop vegetables and ham Grate cheese Beat eggs in a small bowl, add milk (milk powder and water), salt and pepper Heat frying pan and add oil or margarine Saut vegetables until soft. Add ham and saut a minute more. Spread vegetables over the bottom of the pan. 6. Add egg mixture to the frying pan; allow it to heat for about 1 minute. 7. Allow mixture to cook for 3-4 minutes on a medium-low heat. 8. Spread top of mixture with grated cheese and parmesan 9. Cook on stovetop until mixture looks almost set. 10. Place pan in oven under broiler for 2-4 minutes to finish cooking the cheese on top Watch carefully here to make sure it doesnt burn. You will know its done when the egg is set and doesnt jiggle and the cheese is golden brown. 11. Cut into wedges and serve with hash browns

Hashbrowns
Ingredients
3 medium potatoes 20 ml olive oil 1 garlic clove, minced Salt and pepper- to taste

2 ml hot sauce (optional)

Method:

Scrub the potatoes well and cut into 1- 1.5 cm dice Place potatoes into a large bowl and add oil, minced garlic, salt and pepper and hot sauce (if using). Toss potatoes to fully coat them Place potatoes on a baking sheet and broil on high for 10 minutes Mix the potatoes and bake for about another 10 minutes or until potatoes are soft on the inside. Potatoes should be golden brown and tender on the inside.
