Ingredients

2 lb chicken breast or boneless thighs


1/2 cup carrots diced
1/2 cup bell pepper diced
1/2 cup potatoes
1 cup chicken broth
1/2 cup water
1/4 cup soy sauce
1/4 cup tomato catsup
1/4 cup onion
2 cloves garlic minced
2 tbsp olive oil
Directions
1. Stir fry all vegetables and spices except potato for 3 minutes with one tbsp olive oil. hen set
aside.
2. !rown chicken with olive oil. "dd chicken broth# water# catsup and soy sauce. !oil for 1$
minutes.
3. "dd potatoes. !oil for % more minutes.
4. "dd the vegetables that you set aside. &ook for 3 more minutes
