Actinomycetes remain practically unnoticed in the general microflora, when the requirements for
sanitary and hygienic control are toughened, and the list of monitorable indicators is enlarged. The
analysis of their physiological properties suggests that actinomycetes contribute into the process of microbial spoilage of food products with long term storage at low temperature. The purpose of these studies was the selection of actinomycetes from perishable protein product (minced fish) during cold storage at 4 C. Minced fish with the addition of 10 % chitosan solution with vitamin C in the amount
of 3 % from the mass of minced fish was analyzed together with the original product for a more complete description of development process of actinomycetes in minced fish. Simple agars (non-nutrient
and nutrient), potato agar with fish extract, agar with potato broth, Waxman starch agar, and potatoammonia agar were used in order to isolate actinomycetes. The results of the experiments suggest that
the difference in the number of cells grown on Waxman potato agar and potato agar on the fifth and
tenth days, is the number of actinomycetes, found in the minced fish. Their quantity can be up to 100 %
of cells detected after the first day of cultivation.
