SUMMARY
The issues of structural changes in the sphere of
external trade (import) of meat and meat products
are dealt. A structure of import by years (2000
2007) in Russian Federation and countries of CIS
and far foreign countries is presented.
It is marked that there is an urgent necessity of realization in our country of the policy of suppression
of parasitic capital, in order to stop the possibility of
obtaining of large incomes without the organization
of commodities production.
ZUSAMMENFASSUNG
Es wird ber die Strukturvernderungen im Aussenhandel (Import von Fleisch- und Fleischwaren)
berichtet. Die Importstruktur in der Russischen
Fderation, in den GUS-Staaten und im Ausland
im Zeitraum von 2000 bis 2007 wird angesprochen.
Es wurde festgestellt, dass in unserem Lande die
die Politik der Unterdrckung des parasitteren
Kapitals ausgefhrt wird. Dabei handelt es sich um
die Beseitigung der Mglichkeiten zur Erhaltung
von grossen Gewinnen ohne entsprechende Gestaltung der Warenproduktion.

SUMMARY
Quota allocation on the Russian market of meat
is an urgent and appropriate for protection of
Russian producers of meat products. Owing to
the introduction of quotes allocation Russian producers of meat have obtained investments from
large companies, both the Russian and foreign
ones. This should bring to significant increase of
the share of domestic products in the volume of
Russian market for meat.
ZUSAMMENFASSUNG
Die Quotierung des Fleisches auf dem russischen
Markt gehrt zu den aktuellsten Massnahmen
zum Schutz der einheimischen Fleischerzeuger.
Dank der Einfhrung der Quotierung konnten die
russischen Fleischerzeuger Investitionen von grossen russischen und auslndischen Gesellschaften
bekommen. Das soll zur bedeutenden Steigerung
des Anteiles der russischen Erzeugnisse am Gesamtumfang des russischen Marktes fhren.

SUMMARY
The results of the investigations of the influence
of genotype and age of young sheep on chemical
composition and sensory indices of meat and broth
are presented.
It was found that with age the content of intramuscular fat was increasing and the quantity of
moisture decreasing. It was also found that the
appearance and taste of meat did not depend on
genotype and age of the animals.
Sensory indices of meat such as juiciness and
consistency were changing during growth from 2 to
6 months. Juiciness of meat is more emphasized in
crossed animals as compared to pure bred sheep.
When investigating the broth a change in its richness with age of the animals of both the control
and experimental group was found.
ZUSAMMENFASSUNG
Es werden die Ergebnisse der Untersuchungen
ber den Einfluss von Genotyp und Alter der
Jungschafe auf die chemische Zusammensetzung
und sensorische Werte des Fleisches und der
Fleischbrhe angefhrt. Es wurde festgestellt,
dass mit dem Alter der Tiere der Gehalt an intramuskulrem Fett zunimmt und der Wassergehalt
absinktt. Die Untersuchungen ergaben, dass das
Aussehen und die Geschmackseigenschaften von
Genotyp und Alter der Tiere nicht beeinflusst werden. Die sensorischen Werte des Fleisches, wie
Saftigkeit und Konsistenz, verndern sich innerhalb der Wachstumszeit der Jungschafe von 2 bis
6Monaten. Das Fleisch von gekreuzten Tieren war
saftiger als das Fleisch der Jungschafe der reinen
Rasse. Bei der Untersuchung der Brhe wurde die
Vernderung deren Krftigkeit in Abhngigkeit vom
Alter der Tiere sowohl bei der Kontrolle als auch
bei Versuchsgruppe beobachtet.

SUMMARY
The paper presents some peculiar features and
quality attributes of meat of coypu. The results of
physico-chemical investigations of muscular and
fat tissue are given, According to the data available
the meat of coypu is a high quality and delicatessen product and can be successfully used both in
catering and in retail meat trade.
ZUSAMMENFASSUNG
Im diesem Beitrag werden einige Besonderheiten
und Qualittsmerkmale des Fleisches von Nutria
behandelt. Die Ergebnisse der physikalischchemischen Untersuchungen des Muskel- und
Fettgewebes werden angefhrt. Es konnte festgestellt werden, dass diese Fleischart zu hochwertigen Feinkosterzeugnissen gehrt und sowohl
in der Gemeinschaftsverpflegung als auch im
Fleischeinzelhandel angewandt werden kann.

SUMMARY
Medical and biological evaluation of dietetic properties of food fibers wheat cellulose Vitacel,
beet fibers, calcium alginate, TIPRO 601 (native
collagen protein), pork rind has been given. It is
shown that they dont possess a cumulative toxic
effect and have a low level of food sensibilization.
It is found that in the case of the effects of salts
of heavy metals, it is expedient to use combined
preparations of food fibers in optimum ratio for their
removal from the organism.
ZUSAMMENFASSUNG
Es wurden ditische Eigenschaften der Nahrungsfasern medizinischbiologisch bewertet. Es handelte
sich dabei um Weizenfasern Vitacel, Rbenfasern,
Kalziumalginat, TIPRO 601 (natives Kollageneiweiss), Schweineschwarte. Die vergleichenden
Untersuchungen der Nahrungsfasernprparate
ergaben, dass alle diese Prparate eine kumulative
toxische Wirkung aufweisen und ber ein niedriges
alimentres Sensibilisierungsniveau verfgen. Es
wurde festgestellt, dass bei der Einwirkung der
Salze von Schwermetallen ist es sinnvoll, kombinierte Prparate der Nahrungsfasern in optimalen
Verhlnissen zu verwenden.

SUMMARY
The recipes of test samples of cutlets Duslyk
and pelmeni Novoufimskiye, where a complex
use of horsemeat and meat of ducks is to be used
are considered.The test samples of cutlets and
pelmeni differed from the control ones in such a
way, that a part of horsemeat and meat of ducks
was substituted by hydrated protein SCANPRO
730./SF, and in the dough for pelmeni eggs were
substituted by protein Scanpro T95.
The comparative investigations of sensory indices,
chemical composition of control and test samples
of semi-finished meat products, and of aminoacid
and fatty acid composition of cutlets of Bashkir type
and Duslyk were carried out.
The obtained results lead to the conclusion,
that new kinds of cutlets Duslyk and pelmeni
Novoufimskiye will extend the range of meat
semi-finished foods of Bashkir national cuisine.
ZUSAMMENFASSUNG
Es wurden Rezepturen der Versuchsmuster von
Klopsen Duslyk und Pelmeni Nowoufimskije
unter komplexer Verarbeitung des Pferde- und Entenfleisches ausgearbeitet. Die Versuchsmuster dieser
Produkte unterschieden sich von der Kontrolle dadurch, dass ein Teil des Pferde- und Entenfleisches
durch das hydratisierte Eiweiss SCANPRO 730/SF
ausgetauscht wurde. Im Teig fr Pelmeni wurde das
Eiweiss SCANPRO T95 anstatt Eier verarbeitet.
Sensorische Werte, chemische Zusammensetzung
der Kontrolle und Versuchsmuster von Fleischhalbfabrikaten sowie die Amino- und Fettsurenzusammensetzungen von Klopsen Nach baschkirischer
Art und Duslyk wurden vergleichend untersucht.
Im Ergebnis der durchgefhrten Untersuchungen
lsst sich schlussfolgern, dass der Einsatz von
Eierprodukten zu einem teilweisen Austausch von Eiweissen auf Basis von Blutplasma und Bindegewebe
der Schlachttiere zur Erweiterung des Sortiments von
Fleischhalbfabrikaten der baschkirischen nationalen
Kche beitragen kann.

SUMMARY
Food ingredients of Kolvi company being delivered for more than 10 years on the Russian market
are described.
Taking into consideration a wide use of gelatin
in food industry, specialists of Kolvi have developed optimum requirements to gelatin for meat
industry.
On their base the condiments with gelatin for the
sauces with the flavor of mustard, horse radish,
sour cream have been developed.
The recipes for condiments with gelatin depending on consumer properties of a final product are
balanced over composition of the components,
taste and aroma and correspond to the established
sanitary-hygiene requirements.
ZUSAMMENFASSUNG
Die Nahrungsinhaltsstoffe der Firma Kolvi, die
schon seit 10 Jahren auf dem russischen Markt
sind, werden beschrieben. Da die Gelatine in
der Lebensmittelindustrie breit eingesetzt wird,
haben die Mitarbeiter der Firma Kolvi optimale
Anforderungen an die Gelatine fr die Anwendung
in der Fleischindustrie ausgearbeitet. Aufgrund
dieser Anforderungen wurden Wrzmittel mit
Gelatinezugabe fr verschiedene Sossen mit
Geschmack von Senf, Meerrettich saurer Sahne
usw. entwickelt. Die Rezepturen der Wrzmittel
mit Gelatine werden nach der Zusammensetzung
der Inhaltsstoffe, Aroma und Geschmack in
Abhngigkeit von Verbrauchereigenschaften der
Fertiprodukte ausgeglichen und sie entsprechen
den bestehenden hygienischen Anforderungen.

SUMMARY
The authors have created a new installation for
comminution of gelatin, with the use of nitrogen.
It provides for the possibility of constant cooling
of gelatin with nitrogen. The tests of the prototype
were carried out with continuous feeding of liquid
nitrogen into the area of gelatin comminution. The
consumption of nitrogen was 0.3 kg per 1 kg of
the product with the temperature in the area of
comminution being 240C.

Es wurde eine Anlage zur Gelatinezerkleinerung
unter Anwendung von Stickstoff entwickelt. Dabei
ist die kontinuierliche Abkhlung der Gelatine mittels Stickstoff vorgesehen. Die Prfung der Pilotanlage erfolgte unter kontinuierlicher Stickstoffzufuhr
in die Zerkleinerungszone. Der Stickstoffverbrauch
fr 1 kg des Produktes betrug 0,3 kg bei Temperatur in der Arbeitszone 240C.

SUMMARY
The influence of the level of injecting of chilled
and defrosted beef with multi-component brines
on quality of cooked-smoked products has been
investigated.
It was found that the use of multi-component brines
allows obtaining of cooked-smoked products which
are not inferior by their quality indices to items,
manufactured with the use of conventional brines,
with not high levels of the raw materials injecting.
The products manufactured from chilled beef
had higher quality indices as compared to those,
produced from defrosted beef.

Es wurde der Einfluss der Menge der in das
abgekhlte und aufgetaute Fleisch gespritzten
Pkellake auf die Qualitt der gekochten und
gerucherten Produkte untersucht. Die Anwendung von Mehrkomponentenlaken ermglicht die
Herstellung der gekochten und gerucherten
Erzeugnisse, die nach ihren Qualittsmerkmalen den Produkten nicht nachstehen, die
unter Anwendung von blichen Pkellaken in
den geringeren Mengen hergestellt wurden. Die
Erzeugnisse aus abgekhltem Fleisch wiesen
bessere Qualittsmerkmale als die Erzeugnisse
aus aufgetautem Fleisch auf.

SUMMARY
The compounds of endogenous nature being
formed in meat products, during their thermal
treatment, as a result of interaction of substances,
present in the raw materials are considered.
The authors were carrying out the search and optimization of the methods allowing minimize or fully
avoid the formation of heterocyclic amines.
The influence of the most important parameters of
thermal treatment and methods of raw materials
preparation on the content of the main mutagenic
heterocyclic aromatic amines in fried meat products
was studied.

Es werden Verbindungen endogener Natur
untersucht, die in den Fleischerzeugnissen bei
der Erhitzung als Folge der Wechselwirkung
der Stoffe des Rohmateriales entstehen. Die
Verfasser haben nach optimalen Mitteln und Verfahren gesucht, die es ermglichen, die Bildung
von heterozyklischen Aminen zu minimieren oder
vollstndig auszuschliessen. Es wurde der Einfluss
der wichtigsten Parameter der Wrmebehandlung
und der Rohstoffsvorbereitung auf den Gehalt an
den wichtigsten mutagenen heterozyklischen aromatischen Aminen in gebratenen Fleischerzeugnissen bestimmt.

SUMMARY
One of the urgent problems of processed meat products quality preservation has been considered.
The authors have investigated the efficiency of use
of spicy plants to improve the quality and increase
storage life of sausages links and other products.
The results of the experiments have shown that
the high level in the holy thistle extract of phenolic
compounds, for example, flavonoids, phenolic
carbonic acids, tannins allows recommend it as
a promising antioxidant in the production of foods
intended for long-term storage.
ZUSAMMENFASSUNG
Aktuelle Probleme des Qualittserhaltes von
Fleischwaren werden angesprochen. Es wurde
die Effektivitt der Anwendung von Krutern zur
Verbesserung der Qualitt und Verlngerung der
Lagerfristen bei Wrstchen und anderen Waren
untersucht. Die Untersuchungen ergaben, dass
der Extrakt wegen hoher Gehalte an Mariendistel,
Phenolverbindungen wie Flavonoide, Phenolkarbonsuren, Gerbstoffe als ein aussichtsreiches Antioxydationsmittel bei der Herstellung von lagerfhigen
Waren zur Anwendung empfohlen werden kann.

SUMMARY
A body of mathematics is presented allowing
calculation of volumetric and viscosity physical
properties of Newtonian and structured liquids
with the consideration of their chemical composition and temperature. The presented data can be
used in production conditions by technologists
and mechanical engineers in the calculation of
technological processes and equipment for sausages production.

Es wird ein mathematisches Mittel vorgestellt, das
es ermglicht, volumetrische viskose physikalische
Eigenschaften von strukturierten und Newtonflssigkeiten unter Bercksichtigung deren chemischen Zusammensetzung und Temperatur zu
berechnen. Die angefhrten Angaben knnen von
Technologen und Mechanikern bei der Entwicklung
der technologischen Vorgngen und Ausrstungen
fr Wurstherstellung unter Produktionsbedingungen angewandt werden.

SUMMARY
The principle of the offered method of ventilation
emissions cleaning is feeding of ozone in the
system of plenum ventilation, directly into the
work zone.
Ozone interacts with organic contaminants, oxidizing them in destructive manner to harmless (as
well as to less harmful substances, than the initial
ones) CO2 or H2O.
The purification of air in the production facilities is
carried out in the presence of people because of
using of safe doses of ozone up to 100 g/m3.
ZUSAMMENFASSUNG
Das Wesen des vorliegenden Verfahrens zur
Abluftreinigung besteht in der Ozonzufhrung in
das Zulftungssystem direkt in der Arbeitszone.
Der Ozon wirkt mit organischen Schadstoffen
zusammen. Dabei oxydiert er sie destruktiv bis
zur Entstehung unschdlicher oder nicht so
schdlicher Verbindungen im Vergleich zu den
Ausgangsstoffen oder zur Bildung von CO2 oder
H2O. Die Luftreinigung erfolgt bei Anwensenheit
der Menschen, weil gefahrlose Ozonmengen (bis
100 g/m3) angewandt werden.
