Tuile Cookies

Yield: approx 24 cookies


Time: 20 minutes

INGREDIENTS
3 large egg whites
1/4 teaspoon Kosher salt
1/2 cup confectioners sugar
1/4 teaspoon almond extract
1/2 cup all-purpose flour
4 tablespoons unsalted butter, melted

DIRECTIONS
Preheat oven to 350 degrees F and line a half sheet pan with a silicone
baking mat.
In the bowl of an electric mixer with the whisk attachment whip egg whites
and salt until just foamy. Add sugar and almond extract while the mixer is on
low. Once mixture is smooth sprinkle in the flour and continue to mix until
smooth. Increase speed to medium then pour in melted butter. Whisk until
well combined and slightly thickened -- about 1 minute.
Drop level tablespoons of the batter about 6 inches apart onto the baking
sheet. Spread the batter with a wet offset spatula into 4 inch rounds.
Bake in the middle of the oven until they turn an even golden brown, about 68 minutes. Remove from oven and to shape, place warm cookies over a
rolling pin or wine bottle so they set with a curved shape. Don't bake too
many at once as the cookies need to be shaped while still hot.
Repeat process with remaining batter.
A variation: to shape into cigarette cookies roll the hot cookies around the
handle of a wooden spoon to shape.
Use tuiles as a crispy, light garnish on desserts or fill with fruit compote,
custards, whipped cream and dust with powdered sugar as you desire.
