Welcome the New Team Member (NTM) to The Coffee Bean and Tea Leaf and
reinforce that he/she is a valued addition to the team.
Show NTM where to keep his/her belongings and introduce him/her to other TMs.
Ensure that NTM knows that training is a process, and that perfection is not expected
overnight!

SAY: Over your 8 days of basic training and 2 additionl days of advanced training,
you will learn how to provide a Total Quality Experience to our customers. Dont
expect to learn everything all at once; theres a lot to learn! Please feel free to ask

Take a few minutes to read the introductory section of this Learning Journal (the part before
the Onboarding tab). This section will give you more information about how the training
program has been designed to help you succeed as a Coffee Bean and Tea Leaf Barista!
Write below any questions or concerns you might have for your General Manager:

Training Materials Review (10 minutes)


Provide Welcome Kit to the NTM and review the contents. Have the NTM take
notes on page 1-3.
Ensure that learner knows how to use the Learning Journal and Barista Buddy.
Learning Journal
Note: Give learner time to read the Learning Journal Introduction. Answer any
questions before reviewing the following:
NTM should fill out name, store number, and todays date on the cover page
Review the Learning Calendar at a Glance on page 3
Discuss how the training hours will be scheduled; have the NTM write in
his/her schedule on page 3
Explain that all his/her Learning Journal must remain at the store when not
scheduled to work.

NTM should fill out name, store #, and hire date on the first page
Show NTM the different sections

Barista Buddy
Describe Your Coffee/Tea
Your General Manager will now set you up for your first tasting. Afterwards, youll get a
chance to describe that drink so you can remember it better.

Grab your Barista Buddy and find the tasting sheet for the coffee/tea you tasted. In your
own words, write your impressions of the coffee/tea - smooth, sweet, citrusy, whatever you tasted
- its all about what you think and how you would describe it for a customer! It may be difficult
to describe coffee/tea flavor characteristics at first, but dont worry as youll have plenty of
time during and after training to develop your palate and your abilities to describe the coffees
and teas youre tasting. Grab a coffee guide/tea guide for additional information on the
coffee/tea you just tasted.
Every day during training youll taste a different coffee or tea and take notes in your Barista
Buddy. Its a great way to become familiar with everything available at The Coffee Bean &

Tae Leaf.

I started out drinking a lot of sweet with a little coffee. Over the
years Ive come to really appreciate how great our coffees are
alone now I only drink my coffee black!

Drink Tasting (10 minutes)


SAY: In just a moment were going to sample a coffee/tea to introduce you to one
of our products.

Prepare a French Press or Tea Press for the NTM. Have the NTM open his/her
Barista Buddy. Turn to the page of the coffee or tea sampled. Discuss the flavor
profile of the selected product and have the TM refer to the corresponding tasting
sheet to take notes. Provide a coffee/tea guide for additional product information.
Refer the NTM to the Tasting Terms at the back of the Barista Buddy for tasting
descriptions.

SAY: Before we get in to the actual tasks youll be doing in your job as a Barista,
its important that we complete your onboarding process.
Have the learner complete the TM portion of the Kronos onboarding.
GM should complete the I-9 Express to confirm employment eligibility.
(If TM submits a passport or resident card to verify eligibility, fax a copy to your
HRIS for verification).

Retail Team Member Handbook


Your trainer will give you the Retail Team Member Handbook, which is yours to keep. Make sure
to read it carefully! Your trainer will review the handbook with you ~ make sure to ask him or
her any questions that you have!
Look through your Retail Team Member Handbook to find the answers to the following questions.
1. Fill in the blanks:
Coffee Bean & Tea Leaf Mission Statement: To create a spirit within our company
that inspires our Team Members to provide our customers with a Total Quality Experience:

SAY: One of the items in your Welcome Kit was the Retail Team Member
Handbook. Lets take a look at it now. This handbook contains important policies
and other information youll need to know as a Coffee Bean and Tea Leaf Team
Member. Im going to give you time to read the entire handbook and ask any
questions about it, but first lets discuss some specific areas.

Apparel Standards (15 minutes)


Give the NTM his/her apron, hat, uniform shirt(s), nametag, and slip resistant shoe
covers (if needed). Using the current Apparel Guidelines, discuss uniform
standards and explain that the TM is responsible for wearing clean and neat
uniform items each workday.
o Shirt should be the appropriate color, cut, free of holes and/or frays, no
logo except CBTL, wrinkle and stain free.
o If seasonal shirts are available, explain when to wear
o Pants should be free of holes and/or frays, wrinkle and stain free.
o Aprons should be clean, wrinkle and stain free; they should be taken
home and washed before the next scheduled shift.
o Slip resistant shoes are mandatory. They should be closed toed and
covering your entire foot.
o Name tags should always be attached to your apron; only company
issued buttons to be worn
o If applicable, hats worn during your shift.
o Emergency Contact List & Barista Buddy are part of your uniform when
working on shift.
