1) PURPOSE/ OBJECTIVES:
The purpose is to understand the ability of the human sensory organs to identify
difference of food by using two analytical tests (triangle test and ranking test) and
choose ones preference by the consumer test (preference test). The significant
difference is determined using standard statistical tables.
2) PROCEDURE :
There were three test methods being used in this lab, which is triangle test,
ranking test and preference test. Triangle test is designed for testing if a noticeable
difference exists between samples, and the significance of difference is
determined using standard statistical tables. In the triangle test, three orange juice
samples with random order were provided to each judge, random samples are
designed to offset the positional bias. Within the three samples, only one sample is
from a different brand, the difference among three samples is being tested.
Ranking test is the simplest form of intensity test, which four samples of
lemonade with different level of viscosity were presented randomly to judges.
Judges would rank four lemonade depend on their viscosity.
Preference test is a consumer test that indicates the products that consumers
prefer. Two different brands of coke (Coca-Cola and Pepsi) are presented
randomly to judges, and the judges would simply choose the one they like.

4) QUESTIONS:
a. Triangle test:
There is no significant difference between the sweetness of two orange juices
as there are only 12 correct out of 26 judges, which didnt reach the minimum
correct answers necessary to establish level of significance. Thus there would
be no significant difference indicated by the judges. To improve the evaluation
of sweetness, samples with larger sugar content should be used in sampling,
so that there would be a more obvious sweetness between the samples.
b. Ranking test:
There is significant different at 1% level for sample |Ra Rc|, sample |Ra Rd|
and sample |Rb Rd|, also for sample |Rc Rd| there is a significant different at
5% level. The critical absolute difference is 24 at 5% level and 29 at 1% level.
The result indicates there is a graduate increasing viscosity from sample A to
D.
c. Preference test:
From the result, there are 9 people preferred Coca-Cola and 17 people
preferred Pepsi, while it didnt reach the minimum agreeing judgments
necessary to establish significant differentiation of 19 at 5%. Thus there is no
evidence to show either one sample is preferred. The testing conditions were
appropriate for a consumer test as the conditions were same for the analytical
tests.
