90g (Sez) butter, at room temperature,
plus extra for easing
150g (Soe) caster sugar
300g (1002 curd cheese
2 eggs separated

2 thsp semana
grated zest and uice of 1 large lemon

icing sugar for dusting
AUSTRIAN CHEESECAKE
1 Lightly butter the tin and line the bottom with
2 round of baking parchment.
2 Best the butter with the sugar and curd chease
until ight and creamy. Beat in the egg yoks, then
stir in the almonds, semolina, and lemon zest and
juice. Leave to stand for 10 minutes, then fold in
the sultanas.
3 In a separate bowl, whisk the egg whites until stiff
but not diy. Carefully fold into the cheese mixture.
4 Tum into the prepared tin and level the surface.
Bake in a preheated oven at 190°C (375°F, Gas 5)
for 30-35 minutes until browned and firm to the
touch. Turn off the oven and leave the cheesecake
inside to cool for about 1 hour. Chill before serving,
5. Use a knife to loosen the side of the cheesecake
from the tin, then remove the cheesecake. Slide on
to a serving plate, and dust with sifted icing sugar.
