Strawberry Horchata Shaved Ice

Refresh yourself with cold fruits in a glass.


Serves 6 to 8

1 cup almonds
For the horchata syrup
2 cups fresh milk
1 (300-ml) can condensed milk
1 (300-ml) can evaporated milk
2 cups fresh strawberries
a few strawberries for garnish
12 to 24 mashed strawberries
crushed ice
5 teaspoons horchata syrup
(no horchata syrup? Use simple syrup instead)

For garnish
sliced strawberries
powdered cinnamon

1 Toast almonds in a saut pan until golden. Let cool. Chop coarsely and set aside.
2 Make the horchata syrup: Simmer fresh milk, condensed milk, and evaporated milk until thick. Rinse and hull
strawberries. Set aside a few to use as garnish and mash the rest with a fork.
3 To serve, place 2 to 3 teaspoons mashed strawberries at the bottom of each glass then fill the glass with crushed ice.
Drizzle around over ice. Top with almonds, strawberries, a dusting of cinnamon and serve immediately.

***SIMPLE SYRUP
the simple syrup: Mix sugar and water in a pot then bring it to a boil. Turn the heat to low and stir constantly until
sugar is dissolved.
