studiedaboutorganiccrystals.WhenIlookedatthecrystals
theywereverybrightanditwaslikestarsglowing.And
sometimesIevenlosttrackofmyworkbecauseoflookingatthe
crystals.ThiswascalledCrystallography.

Nextfrom18621877Imostlylookedatgermsinfoodand
milk,andsilkwormproblems.Thereisaprocesswheremilkis
heateduptoahightemperaturetodestroyanygermsthatcould
makeyousick.Idiscoveredthatboilingmilktoabout63Cand
thencoolingitdowntoabout4Ckillsthebadbacteriainmilk.
ThisprocessiscalledPasteurization,aftermy
name.Pasteurizationmademilksafertodrink,andtheUnited
StatesFoodandDrugAdministration(FDA)begantopasslawsto
requireit.Iadmiredtheideaaboutrequiringlawsfor
Pasteurization.Bythe1950sanydairyproductthatweregoing
tobesoldacrossstatelineshadtobepasteurized.WhenI
pasteurizedmilkmymethodinvolvedheatingliquidsinlarge
vatsofperiodsupto30minutes.ThisiscalledLowtemperature
LongTime(LTLT).Nowadayspeopleusuallyheattheliquidtoa
veryhightemperatureforashorttime.ThisiscalledHigh
TemperatureShortTimePasteurization(HTST).

PeoplesaythatHTSTisbetterthanmywayofmaintainingthe
nutrientsandthequalityoffoodwhichIdontdisagreeon.
Pasteurizationisnotjustatype.Thereare3differenttypes.
ThefirstoneiscalledPasteurizedMilkwhichisheatedupto
72degreesforabout15seconds.Thiscanonlystayinthe
Fridgefor2weeks.TheSecondtypeiscalledUltraPasteurized
Milkwhichisheateduptoa138degreesfor2seconds.Thiscan
stayinthefridgefor+,for90days.Thelasttypeiscalled
UltraHighTemperaturePasteurizationwhichisheatedupto150
degreesfor1to2seconds.Ifitispackagedwellitcanstay
inthefridgeforseveralmonths.BecauseofPasteurization
therearenowadaysmilkcalledPasteurMilk.

In1865theSilkwormdiseasewasahugeproblem.The
SilkwormdiseasedestroyedSilkIndustriesallovertheworld.
AlthoughIdidn'thavea
clueabouttheSilkworm
DiseaseIwasaskedbythe
DepartmentofAgricultureto
investigatethedisease.It
wasreallyhardformeto
supporttheissueandIwas
inahurrytosavethe
industry's.WhenIstudied
abouttheproblemit
revealedthatitwascaused
byshinycorpuscles.Itwas
oneofmybiggestchallenges
Ihaveeverfaced.

NextFrom1877to1887Iwasamicrobiologist.ThatswhenI
studiedaboutRabies.IfiguredoutthatifSalivafoamsatthe
mouthofadogitindicatesthatthedoghadRabies.Usingmy
microscopeIlearnedthatitiscausedbyviruseswhichisa
tinyorganism.Irealizedthatthediseaseaffectsthecentral
nervoussystemandbyextractingfluidfromthespinalcolumns
ofinfectedanimals.

KnowingalltheinformationImadevaccinationsforanthrax
whichissomethinglikepoisonpowder,rabies,andadisease
affectingsilkworms.Onedaya9yearoldboyJosephMeister
wasbittenbyamaddogwithRabiesandtheBoywasbroughtto
me.LuckilyIhadavaccinationforRabies.Igavehimethe
vaccinationandhesurvived.Iwasgladthatallofmy
vaccinationswereready.

SadlyonSeptember28th1895Ipastaway.Iwasoneofthe
bestscientistsinFrance.Iwassatisfiedwithmydiscoveries
andasoneofmyquotesay,IhavedonewhatIcould.Nowall
thepeopleintheworldknowaboutbacteriaandweallcandrink
healthyandfreshmilk!Ifpeopledrinkmilktheycangrowand
