Lemon Chicken Tikka

Ingredients
Low Fat Yogurt - 2 cups
Lemon juice - 2 tablespoon
Ground cumin - 4 teaspoons
Ground cinnamon - 2 teaspoon
Cayenne pepper - 4 teaspoons
Freshly ground black pepper - 4 teaspoons
Minced fresh ginger - 2 tablespoon
Salt, or to taste - 8 teaspoons
Boneless skinless chicken breasts, cut into bite-size pieces - 6
Long skewers - 8
Oil - 1 tsp
Garlic, minced - 2 clove
Jalapeno pepper, finely chopped - 2
Ground cumin - 4 teaspoons
Paprika - 4 teaspoons
Salt, or to taste - 6 teaspoons
Tomato sauce - 2 (8 ounce) can
Chopped fresh cilantro - 1/2 cup
Method
1.Prepare the marinade by mixing together yogurt, lemon juice, 2 teaspoons cumin, cinnamon,
cayenne, black pepper, ginger, and 4 teaspoons salt.
2.Stir in chicken in the marinade and set aside , refrigerated for an hour.
3.Preheat a grill for high heat and lightly oil the grill grate.
4. Thread chicken onto skewers, and discard marinade.
5.Grill until juices run clear, about 5 minutes on each side.
6.Add the oil in a large heavy skillet over medium heat. Saute garlic and jalapeno for 1 minute.
7.Prepare the seasonings with 2 teaspoons cumin, tomato sauce, paprika, and 3 teaspoons salt.
8.Simmer on low heat until sauce thickens, about 20 minutes.
9.Add grilled chicken, and simmer for 10 minutes. Transfer to a serving platter, and garnish with
cilantro.
