Chicken Primavera

TARGET AUDIENCE: Adult WIC participants and parents/caregivers of all other WIC
participants.
GOAL: To demonstrate to WIC participants simple recipes that use WIC approved
foods, MyPlate, and ways to incorporate healthy living habits.
OBJECTIVES:
Participants will be able to plan and prepare simple recipes.
Participants will be able to identify WIC approved foods in recipes.
Participants will be able to identify MyPlate food groups in recipes.
Participants will be able to specify changes they would like to make as a result of
the classes.
Groceries you will need to have:
1 tablespoon of oil or margarine
pound boneless skinless chicken breasts
2 cups frozen vegetables
1 small onion
1 14.5 ounce can reduced sodium chicken broth
teaspoon salt
teaspoon pepper
1 cups uncooked instant brown rice
Optional:
teaspoon dried oregano or basil
cup WIC approved cheese, shredded
Supplies you will need to have;
10 12 inch skillet with lid
sharp knife to cut chicken into strips & chop onion
cutting board
large wooden or plastic spoon
can opener
dry measuring cups
measuring spoons
2 hot pads or mitts
small plates and forks for tasting
Optional: cheese grater
Notes for teachers:
If your schedule allows, practice making the recipe before the class.
Choosing frozen peas and carrots adds nice color to this dish.
