Easter Brunch
Spring is a time of rebirth and regeneration after the
cold dreariness of winter. The gray is swept away,
replaced by beauty and color - and Easter is the
cornerstone celebration of spring! Tradition and ritual,
always strong in our Italian culture, play an important
role at Easter, or Pasqua, celebrations - and there
are many ceremonies and culinary customs that are
religiously upheld.
Traditional Italian Easter meals vary from region
to region, but eggs and roasted lamb are common
elements everywhere. Eggs represent life, fertility,
and renewal, all of which are essential symbols of
Easter. Dyed eggs grace many Easter tables, and eggs
are often found in soups and in traditional Easter
pie (Torta Pasqualina). Roasted lamb, as a symbol
of birth and the shepherd, is the traditional main
course. While food is certainly a main attraction at
every Italian celebration, because Easter marks the end
of the traditional deprivations of the Lenten season,
cuisine plays an especially big role in the celebration of
Pasqua in Italy and here at the Italian Club of Dallas.
Come celebrate Easter on March 27 with your Italian
Club family and friends. The Italian Club of Dallas
will be decked out for spring, and there will be no
better way to say arrivederci to Lent then by enjoying
this holiday meal!

Our last Christmas Bake Sale was such a success that
our members and friends asked for more, more and
more!!! We will have many Easter cakes, Pastiere
di Grano (Easter grain pie), Cassata, cookies and
desserts prepared by our Italian Club members and by
our bakery chef Christian to help you celebrate Easter
Italian Style. These recipes have been handed down
from generation to generation. Why buy cakes and
Italian specialties from your local supermarket when
you can serve the scrumptious baked goods made with
love by our Italian Club members?
There also will be available for sale some other Italian
specialties like trays of Lasagna and Manicotti

La Trattoria Family Cena March 18


Please mark your calendar for March 18. On this
evening we will welcome families to come, one and
all (including children) for an Italian-American
style Cena. It is the regular guest cena night and we
want you to bring your children and grandchildren,
nieces, nephews, etc. There will be Baked Ziti and
Meatballs as well as an antipasto and salad. We will
have a special area for the children to be able to play
games and enjoy a film so the parents can visit and
enjoy the evening. Please RSVP with the number

Presidents Letter
Saluti dal Presidente, marzo 2016
HELP! I need somebody. HELP! Now just
anybody. HELP! You know I need someone, HELP!
Ive been honored to be your ICD President for a
little over two months now. Your Board of directors,
which includes Carole Stripolli, Joan Seley, Francesca
Barone, Barbie Gumin and Bill Van Hoewyk have spent countless hours
analyzing the financials and operations of the club, looking at expenses
vs. income and reviewing available actions that may optimize our bottom
line. The springtime is usually slow months for us so a snapshot of worse
case scenarios has kept us on our toes. To be very frank, I will say that
we are finding that these are indeed very tough times for ICD. The
financial situation is bleak, but weve seen worse. We must not only get
through these slow times but build a solid plan to survive, grow and
flourish in the future.
I need your HELP! Everyones HELP! The best way you can help,
other than a direct donation, is to support the Clubs activities. Our
Events committee has some wonderful activities planned that are
enjoyable for you and beneficial for the Club. To name just a few, a
Bake Sale in March, Easter Brunch, Mystery Dinner on April 9 and the
always popular Limoncello Smackdown on April 22. Were finalizing
our Guest Chef program with our first Chef, Morris Salerno, and a
Wednesday night with a presentation from Bella Italia. In addition to
these great events, we are working feverishly to book one wine tasting
per month. And there is more! Supporting any or all these would be
wonderful. On a smaller scale, if you havent been to a Cena lately, come
on down! Order a desert and cappuccino with your meal. Those extra
few bucks make a big difference.
Other than financial support in the form of donations and participation,
another way to HELP is to get involved. The Club belongs to you, the
members. It depends on you to exist. HELP! We need Board and
Committee members. If you can commit a few hours a month and have
the desire to be involved in the Clubs future, consider applying to be
on our Board of Directors. Dont have much time but have some great
ideas to pitch? Consider one of the Committees. We would love more
participation on the Events, Membership, Marketing, Financial and
Operations Committees! If you have a special talent, then please HELP!

Culinary Events
We are temporarily closed for Friday lunch and Wednesday Pasta &
Pizza Night. There will still be special events planned for Wednesday
nights such as wine dinners and other presentations. Stay tuned for more
information.

Bake Sale!

Let Us Celebrate Limoncello


April 22, 2016
Here is a little history of Limoncello, in case you are interested. It is a
liqueur mainly produced in Southern Italy, especially in the region of the
Gulf of Naples. It is also produced in Abruzzo, Basilicata, Sicily, Sardinia
and Menton in France and it is at least one hundred years old.
Our Third Annual Limoncello Smackdown saw the beginning of a new
reign as Barbie Gumin was crowned the new Queen Limonhead, after
Lynn Barnards two year reign. The challenge has been called! Our last
three competitions were tons of fun, with laughter, tastings, and serious
judging. Think you have the best Limoncello? Come join us for our Fourth
Limoncello Smackdown after Cena on Friday, April 22 when we will once
again have a competition to determine who has the best.
In the interest of providing a level playing field for the tasting, we ask
that all entries be clear lemon-based liqueurs (no crema/creams or
orange, mango, etc. well save those for another contest!). Also, Melissa
is providing a standard bottle for each entrant so that the tasting is truly
blind. Please contact Melissa by April 1 and obtain your bottle before the

Carrie Harris at marcar32@verizon.net. We need to know in advance who
is participating.
What will you win, should your Limoncello be judged the best? The
accolades of your ICD friends, the right to say your liqueur is the best, and
the title of King or Queen Limonhead. What more could you want?

Limoncello in the Smackdown. It promises to be a fun night for all as
usual.

Italian Folk Dancing for Children


There is a well hidden secret in the Italian Club and it is a class for Children
that teaches the ancestral dances from the various regions of Italy. Maria
Chobany and Carrie Harris have been doing this since the mid 80s every
Saturday morning at 10:30. The dances are part of the Italian heritage
and also fun and entertaining. In the past the group has participated in
performances at local and state wide events. Dancing presents a side to
their Italian heritage besides language, soccer and food. The dancing
exposes them to some of the Musical Art of Italy.
Bring your children, any age, to audit this class on any Saturday morning.
Perhaps your child will enjoy this and want to participate. Just let us know

Join Team Viva Litalia; Take a Step for a Cure


The ICDs Team Viva LItalia will join hundreds of walkers at Addison
Circle Park on Saturday, April 2 to raise money for blood cancer research in
the Lymphoma Research Foundations seventh annual Dallas Lymphoma
5K walk. As part of the Clubs charitable outreach mission, Team Viva
LItalia will participate in this fun and lively fundraiser. Come don your
sneakers, put on an ICD T-shirt, or wear Italian flag colors, and join the
Team at this worthwhile event! Registration will start at 9:00 a.m.
The LRF is the largest non-governmental source of research grants in the
country for lymphoma research programs. It is committed to understanding
lymphoma and its causes, and to finding effective treatments and cures
for this disease. Unfortunately, although the cancer rate overall has been
decreasing in the US, the incidence of lymphoma has been increasing. Once
relatively rare, it now represents about 4% of cancer diagnosis, and is the
third most common cancer in children. Help turn these numbers around to
get lymphoma on the run. If you need more information about the event or

Pizza Rustica ~ Easter Rustic Pie


Ingredients:
For the Dough:
1 Lb Flour
2 Eggs
Pinch of salt
1/2 Lb Butter, cold
Milk, as much as
needed
For the Filling:
1 Lb Basket Cheese or
Ricotta cheese
3 Eggs +1 egg for the
egg wash
1/4 Lb Provolone Sharp
1/4 Lb Mozzarella
4 Tbs Grated Pecorino
cheese
1/4 Lb Prosciutto
1/4 Lb Sopressata
1/4 Lb Mortadella
Fresh black pepper, as
desired

Directions:
Prepare the Dough:
In a stand mixer, add the flour, salt and the butter cut in
cubes. Let the flour absorb all the butter. Add the eggs and
let them mix well. Add enough milk (about 1/4 + Cups)
until you have a firm ball of dough. Let it rest.
Prepare the Filling:
Cut all the meats and cheeses in small cubes and put in a
large bowl. Add the grated Pecorino and mix. Add the eggs
and mix. Add the basket cheese and mix well. Add fresh
black pepper as desired. Set aside.
Assemble the Pizza Rustica:
Preheat the oven at 350F. Butter and flour a 9 springform
pan. Cut a little less than 1/3 of the dough and set aside.
With a rolling pin, roll the large piece of dough in a thin
circle. Place the dough over the springform pan so that it
overflows the borders of the pan. Add the filing and spread it
evenly. With a sharp knife, cut the excess dough from around
the border of the pan. With the remaining dough, roll it thin
and with a ravioli cutter, cut strips to make the criss-cross
strips and arrange them on top of the filling. Wet the strips
with egg wash and bake for about 1 hr and 15 minutes.

March Wine Feature


Hello again wine lovers! This month we are traveling to the Abruzzo region of
Italy where Montepulciano is king! The region of Abruzzo is considered one
of Italys most mountainous areas, and the hillside vineyards that cover the area
benefit from plentiful sun exposure and cool breezes coming off the Adriatic
Ocean that ventilate the vineyards.
Montepulciano is a red wine grape that produces a rustic type of dry red wine. It
is a very aromatic wine with velvety soft tannins. It is extremely food friendly and
pairs beautifully with grilled lamb, veal, and pasta. It offers earthy notes as well as
blackberries, blueberries and stewed fruits.
Montepulciano is also one of the most widely exported grapes in all of Italy. The
producer I chose for the club is Caldora Montepulciano d Abruzzo. Caldora is a
partnership between visionary Valentino Sciotti and renowned winemaker Mario
Ercolino. It is one of the largest cooperatives in the Abruzzo. Many of you have
had a chance to try this wine, and I encourage anyone who hasnt to buy a bottle
on your next visit. I have enjoyed this classic Italian wine on many occasions, and
I highly recommend it!

March Book Club News


In I Am Livia by Phyllis T. Smith, one of ancient Romes most
notorious women tells her story. Married to a General Tiberius at
age 14, Livia Drucilla found herself, at the Emperors insistence,
divorced and remarried by age 16 to the Emperor Augustus
Caesar, with her ex-husband General Tiberius giving her away in
marriage. For 50 years, Livia served as Augustuss Empress and
principal advisor. She knew untrammeled power and wealth. As
Livia and the Emperor had no children, Livia arranged for her
oldest son from her prior marriage, Tiberius, to succeed to the
throne after all possible rivals came to unfortunate ends. When the Emperor died, he
had Livia adopted into the Caesar family and renamed Julia Augustus. He bequeathed
her with one third of his estate. Join us at 7:00 p.m. on Wednesday, March 30.

World Unity Run, Festival & Concert


The Festival for World Unity will be held on April 2, 2016 from 5:30 p.m.
to 10 p.m. at Stewart Creek Park in The Colony. The event is sponsored by
Mothers Opposing Bullying. I Colori Italiani and I Piccoli Colori will be
present to showcase the Italian Culture through dance. There will be other great
entertainment such as Emerald City Band, and LimeLight. This should be a fun
event and it represents a worthy cause.
Please put this on your calendar and represent the Italian Culture!

Toni Parigi had surgery in February and has a long recovery including Rehab. Send
your get well cards.
Also Rosemary Pisecco had surgery in February. We hope the best for her recovery.
April Biondi, wife of Joe Biondi has recently been seriously ill. She is recovering at
home. Joe is the son of one of the founding families of the Italian Club of Dallas,
Emilio and Vincenza Biondi.
Rose Tiseo, wife of Arturo Tiseo (many may recognize them from the old days of
the Club) has been ill for a long time.
Maria Hawkins-Agostini lost her Father, Doyle Hawkings on February 18. We
send our condolences.
Remember these families in your prayers. Give them a call or send a card to let
them know we are thinking of them.
Please let me know of any family event you would like to share with the

Opera On Tap Are Cena


Sweethearts!
At the February 12 Cena, the Club attendees
celebrated loves sweet songs with a wonderful
performance by Opera On Tap.
Roses, a sumptuous menu, wine, and sweets set
the stage for the beautiful, romantic arias. There
was rapt appreciation of their presentation.
If you missed them, Opera On Tap will be
returning on April 1 with a new program to
warm your musical soul.
