Service Sequence

1. Greet every customer at the door by saying good morning/good afternoon/good evening
2. Ask how many people will be dining
3. Pick up menus
4. Walk the guests to the table
5. Introduce your self as the waiter for the evening
6. Offer the menus and communicate the tent card special and blackboard specials (each of the
specials must be explained in full)
7. Take a pre dining beverage order (if the guests are dining), you can also suggest some
sparkling mineral water for the table to share
8. Place order into the POS
9. Take drinks to the table
10. Suggest to the customer to bring some bread to the table while they decide on the menu
11. Give some time 2-4 minutes for the customer to decide on their order
12. Take the order for wine and repeat the order back to the customer
13. Take the order for entrée, starters and main courses. If the customers don’t have an entrée
suggest sharing one the highlighted entrée items on the menu to start off with, and repeat the
order back to the customer
14. Suggest a salad to share for the table if having main courses (May I suggest a garden salad
to share for the table)
15. Take menus and enter order into POS
16. Set up cutlery
17. Deliver wine if ordered
18. Deliver entrees or starters
19. Call back to the table after 3-4 minutes and ask if everything is OK
20. Top up wines and assume the order for more drinks
21. Clear entrees or starters plates
22. Deliver main courses
23. Ask if they would like cracked pepper and or parmesan for the pastas
24. Call back to the table after 3-4 minutes and ask if everything is OK
25. Top up wines and assume the order for more drinks
26. Clear main course plates
27. Offer the desserts menus and describe the dessert specials for the day
28. Take dessert order
29. Assume that they will have tea or coffee so ask them what they would like and upsel them to
a liqueur coffee by saying (how about trying one of our special liqueur coffees, may I
suggest a Jamaican - Tia Maria it will complement your dessert nicely)
30. Set up cutlery
31. Deliver dessert, tea or coffees
32. Clear plates
33. Print our bill and deliver to the table with Datacard
34. Explain to customer how they can win from filling out the datacard and say thankyou for
dining
35. If they were a great customer offer them a 25% discount card for their next visit and hand
them the card. Expire the date for 30 days
36. Open the door for the customer on the way out
