When i was a young boy growing up with my sister and my
four brothers,my mother would always make fried zeppole on Saint Joseph day in the month of march! This was a special treat that i will never forget! This is the recipe that my mother gave to me many years ago! Make sure you drain them well. This will make about 4 dozen of the Zeppole...You can reduce it if you want to...You will need the following ingredients.. 3-1/2-cups of flour.. 1/2-cup sugar.. 1-1/2-tablespoons Baking powder.. 1-cup of raisins...soaked in warm water for ten minutes.. 5-eggs...Beaten.. 1-tablespoon vanilla extract.. 1-tablespoon anise extract.. Enough Canola oil to cover the bottom of a pan at least one inch deep...Beat your eggs,sugar,vanilla extract,anise extract, drain your raisins and add them at this time....Gradually add the flour with the baking powder to form a thick batter... Heat your oil in a pan until medium hot....Drop your fritters or what we call zeppole into the hot oil by using a large spoon.. Let flote to the top of the oil....remove when golden brown... Drain on paper towels....Place in large brown paper bag and shake with table sugar.....Or you can let cool...then sprinkle with confectioners sugar.....These are tasty...Enjoy this recipe that my family and many italian people have made for the last 200 years or more!Everyone has his or her version that has been handed down over the years...This is the Spinelli style that i remember..
