Grilled salmon
1 6-ounce salmon fillet per person 2 T. Accent Flavor enhancer 2 T. paprika 2 T. cayenne pepper 1 T. fresh ground black peppercorns 2 cloves of garlic, crushed 3 T. onion flakes 2 T. dried oregano Oil mix all dry ingredients together with a mortar and pestle until powdery. Rub all over salmon fillets on both sides and leave for 1-2 hours. Heat a ridged grill pan, chargrill or BBQ until hot. Spread some oil over the salmon fillets and place on the grill. Cook for 5 minutes. Turn over and cook until done. Test by poking a knife into the center of fillet and look inside; the fish should flake easily. Serve with a mixed pasta salad. Serves 6-8

smokey steak kabobs
Serves 6 2 T. Wrights natural hickory seasoning 1/2 t. Accent Flavor Enhancer 1 cup coffee 1/2 cup chopped onion 1/3 cup oil 2 pounds steak (rib-eye or sirloin) cut into 1-inch cubes 1 large green pepper, cut into chunks 1/2 pound fresh mushrooms cherry tomatoes In a bowl, combine hickory seasoning, flavor enhancer, coffee, onion and oil. Add steak cubes and stir occasionally. marinate 45 minutes. drain. Using long skewers, alternate steak cubes, green pepper chunks, mushrooms and cherry tomatoes. Place skewers on grill over hot coals. Grill 6 minutes, turn and grill additional 4-6 minutes. and are cut from the back. Country style ribs come from the shoulder area and are meatier than the other cuts. When buying shrimp for grilling, make sure you get at least jumbo sized (12 to 15 per pound), or colossal (about 10 per pound). If theyre much smaller, they will be harder to handle and will cook more quickly than the other ingredients on the skewer.

Memphis-Style BBQ Sauce
makes about 2 cups The secret to this sauce is Grandmas Molasses it adds extra zest to the juicy ribs. 1 T. butter 1/4 cup finely chopped onion 1 1/2 cups ketchup 1/4 cup chili sauce 4 T. brown sugar 4 T. Grandmas Molasses 2 T. yellow mustard 1 T. fresh lemon juice 1 T. Worcestershire sauce 1 T. Wrights Liquid Smoke 1/2 t. garlic powder or granulated garlic 1/2 t. salt 1/2 t. Ortega Chile Seasoning Mix dash cayenne pepper Saut onion in butter until soft. Add remaining ingredients. Simmer about 15 minutes. Adjust seasonings to taste.

BBQ Ribs
Serves 6 -8 4 slabs (about 10 pounds) pork spareribs dry rub: 2 T. each kosher salt, black pepper, onion powder and garlic powder Rub on both sides of ribs and refrigerate 2-4 hours, or overnight. Heat oven to 250f. Line a rimmed baking sheet with foil. Add 2 cups water to baking sheet. Place ribs on rack on baking sheet. Bake 4 hours or until very tender, adding water to pan as needed. While ribs are baking, make BBQ sauce. Preheat grill to medium. Place ribs on grill and baste with sauce, turning frequently, for 15-20 minutes.

f you have budding entrepreneurs at home, youve probably heard about lemonade stands. How fun and easy they are. Yes, even for parentsprovided you arrange matters so the kids can do the work. first, make sure they plan to set up shop in the front yard or driveway, where you can supervise without hovering. for a stand, simply donate a card table and either a brown paper or plastic tablecloth. See that the operation has enough coins to make change. If the staff hasnt dealt with that before, give them a short rehearsal in counting back when a customer pays with a dollar bill. make sure that hands, faces and clothes are clean, and remind the young merchants that good manners go a long way. The night before opening day, they can follow these instructions to make lemonade and cookies.

fresh lemonade
fresh lemonade starts with freshly squeezed lemon juice. Some kids squeeze by hand, but a reamer or small hand juicer speeds up the job. A mechanical or electric juicer is good for large batches. Nine lemons will produce about 1 cups of fresh lemon juice. Set it aside. In a microwave-safe container, such as a 16ounce Pyrex measuring cup, place 1 cup sugar, then fill to the 2 cup mark with tap water. Stir the sugar and water together. microwave the sugar-water for 1 minute. Then stir it and zap it for another minute. Now you have simple syrup. Pour it and the lemon juice into a large plastic container. Stir in 5 cups of cold tap water. This makes about half a gallon of lemonade. multipy recipe as needed. If fliers promoting the stand have been spread through the neighborhood, business could be brisk. So it might be a good idea to keep another gallon of lemonade in the fridge or ice chest. In areas where lemons are very expensive, some stands stretch their freshly squeezed lemonade with glasses of freshly defrosted concentrate. To add visual oomph and a little offbeat flavor to each glass, garnish with mint leaves or freeze fruit into the ice cubes. Or use fruit punch to create red cubes.

n the long, hot days of summer, theres nothing quite like your own backyard oasis. If this is the year youll take the pool plunge, do your homework first. Any kind of pool is a huge investment. Consider your budget, life situation and swimming habits before wading in.

What to consider before getting an in-ground, above-ground pool


Above-ground
Though above-ground pools of the past looked tacky, Osterhout says, many contemporary above-grounds are actually quite sleek and attractive. Check some out before you write them off. decking can be built to surround the pool completely, she says, and at that point you cant tell if its in-ground or not. Above-grounds now come in an array of sizes and styles. As for the depth, consider whether you need a deep end. We didnt like the deep end because my kids wanted to play volleyball, says Osterhout. In fact, many families find that the deep end goes largely unused. Similarly, you may not need varied depths if youre just going to swim laps. If youre not sure how long youll be in your home, an above-ground pool is much easier to remove if the time comes. (many buyers with small children dont want pools for safety reasons.) In-ground
If youre a serious swimmer, an avid diver or you have a specific vision of the pool of your dreams, an inground pool could be for you. With in-ground models, you can have a custom shape, varied depths, choice of construction materials and extras like slides and fountains. In-ground pools can be built to any depth, including a deep end for diving, whereas above-ground models are usually all one depth. In-ground pools are expensive, though, usually costing much more than their above-ground cousins.

But that can be part of the appeal for some customers, says Beth Osterhout of B & d Pool and Spa in Upstate New York. It can be a status thingshowing that you can afford this great, in-ground pool. Because the nicest ones blend so beautifully into a landscape, people associate in-ground pools with better quality. That association, though, isnt completely fair.

This will not only save you up to 20% in costs, but will also take a load off of environmental energy consumption. Use cold water for laundry. Clothes will still get clean and you consume less energy. Warm water cycles use less than hot, but always rinsing on cold will conserve usage and cost. Line dry clothes whenever possible. When you need to use the dryer, run full loads, use the moisture-sensing setting, and clean the lint trap after each use. Vent kitchen, laundry, and bathroom fans to the outside to keep heat and humidity out of the home. Keep the hot water heater at 120 Fahrenheit to save money on your electric bill. Try to run appliances off peak hours, before 4:00pm and after 6:00pm to help prevent electricity outages. use a programable thermostat, and set it to 78 degrees when you are home and 85 when you are away. These temperatures will keep the system running efficiently. You can save one to three percent per degree in cost for each degree set above 72f. use ceiling or room fans to circulate the air, which will help cool the room and reduce the need for air conditioning. use window curtains and shades, especially in the day time. Keeping sunlight out, especially mid-day, will help keep the wholehouse temperature down and reduce the need for air conditioners and fans. Take showers instead of baths. Use the bathroom fan to remove heat and humidity. If you have a pool, turn off the filter when the pool is not in use. unplug electronic devices and chargers when they arent in use. most electronics use electricity even when they are turned off. Use power strips, and turn appliances and electronic devices such as computers and printers off at the power strip. Change furnace filters monthly. dirty filters restrict airflow and can cause heating and cooling systems to run longer, increasing energy use and cost. Repair or replace windows and doors. Caulk, weather-strip, and seal gaps or replace them with all-weather styles to increase efficiency and greatly reduce costs. shade your home by installing awnings, and solar-controlled window films. This will reduce exposure to ultraviolet radiation, reduce glare, and conserve energy by keeping rooms cooler, reducing the need for air conditioning. Install a permanent whole-house fan in the attic to draw cool air in through the windows while forcing hot air out through attic vents. This will help reduce air conditioning use, especially when used in the early mornings and evenings. Also, attic insulation will help control the temperature inside the home. replace incandescent light bulbs that are used more than two hours per day with energy-efficient compact fluorescent bulbs. Visit your local hardware store for inexpensive energy-saving tools, or look online for information and resources on how to save energy consumption and costs. Check with your utility companies for costsaving opportunities including assistance programs, incentives, federal tax credits, weatherizing assistance, and home energy audits. chilled asparagus soup with lemon


2.5 lbs. fresh asparagus 2 cups chopped onion 4 cups vegetable stock 1 T. kosher salt 1/2 T. black pepper 1/2 gallon whole milk 1 pint plain yogurt Zest & juice of 2 lemons, or to taste Ring 1/3 of the veggie stock with cut up asparagus, onion, salt and pepper. Bring to a boil. Cook veggies until tender. Using an immersion blender, stick blender or regular drink blender to process. Return to pot, add remaining stock and bring back to a simmer. Add milk, yogurt and lemon and combine all well. Season again with salt, pepper and lemon to taste. You can save the asparagus tips for garnish, but we love to sprinkle pretty little purple chive blossom all over the top of the soup!
