Grapes 90% Merlot 10% Cabernet sauvignon Surface : 15 Ha Soil : clayey limestone Vinification Grapes are selected by hands after harvested by machine sorted and de-stalked before being gently pressed in order to extract maximum colour in the juice. Then juice undergoes a traditional fermentation, left on lees for up to 28 days, with regular pumping in small stainless steal vats, under temperature control process. Wine is aged in barrels for approximately 12 months. Tasting A very good maturity of the Merlots which made 90% of the assembling, gives a red wine with a nice brilliant robe and nice aromas with a fully and velvety mouth. Serving suggestions This wine is excellent with both red and white meats, game and cheese. We suggest that the wine be drunk at an ambient temperature of 16 to 18C after being opened for an hour or so.
