Red cabbage leaves can be used to make a natural pH indicator. The leaves are boiled in water to extract their pigments, then filtered to produce a purple liquid. Drops of this liquid turn red in acid, remain purple in water, and turn blue or green in alkali, allowing it to indicate the pH of different solutions.
