1 - 398ml can o artichokes - ell-d7ained, cut up
1 c. o lellman`s mayonnaise
1-2 garlic cloes - crushed,minced
1 tsp. lemon juice
' c. o Parmesan cheese

Mix all together and bake or 10-15 minutes in 350-degree oen. Sere with toasted
Pita triangles or bite-size crackers.

1 can Artichoke learts |Drained|
1 cup Light Mayonnaise
1 cup Parmesan Cheese
1 or 2 Cloes o Garlic |Minced|

Blend all ingredients together.

leat in microwae to sere.

Sere with crackers.

:de's Sticky Chicken Wings

3-4 lbs chicken wings or drumsticks
1 cup white sugar
1 cup cider inegar
2,3 cup ketchup
1 tsp salt
' tsp pepper
' tsp dry mustard
1 tsp garlic powder
2 tsp \orcestershire sauce
1-2 tbsp curry powder
1 tsp paprika

Brown chicken wings. Put in casserole dish. leat sugar, inegar and ketchup or 5 mins. Add rest o
ingredients. Spread mixture oer wings. Bake at 350 degrees l or 40-45 mins.


C7od pleasing cheese dip

1lb Veleeta cheese, cubes
1.5 lb ground bee, browned
1 jar salsa ,hot or mild,
Cajun seasoning to taste

1oss all ingredients in a crockpot, heat on high about one hour or until the cheese starts to brown,
then turn down to low. Keep warm while sering, being careul not to burn the cheese.

Lnjoy! It's always a crowd pleaser and always requested!

Spinach Dip

1 10 oz pkg rozen spinach, thawed
1 1,2 cups sour cream
1 pkg. Knorr Vegetable Soup Mix ,dry,
1 cup mayonnaise
1 cup sliced water chestnuts
3 green onions, inely chopped
1 round, crusty bread loa
Squeeze excess water rom spinach.

In a bowl, combine ingredients ,except the bread, in the order listed.
Slice the top o the round bread loa, leaing it in one piece to orm a cap that can be replaced ater
illing. Scoop out the center bread, leaing a 1 1,2 inch crust and an empty center.
Put the spinach mixture inside the bread "bowl", replace the cap.
\rap the loa in tin oil, bake at 350l until warm.


C7ab Dip

1 Container lrozen Crab ,approx 11 oz, - thawed
2 packages cream cheese
1,3 cup butter
Garlic to taste
Seasoning salt to taste

ethod: Place the crab, cream cheese and butter in a baking dish, coer and heat in oen until
melted. Stir to mix, season to taste. Sere hot with Nacho Chips or Crusty bread.

Prep time: 10 minutes. Seres 6.
14 oz. can o artichoke hearts
1 cup mayo, regular or light
1 cup shredded Parmesan cheese
lew dashes o pepper
,Optional add-ins: 1abasco sauce, garlic powder, horseradish,

Preheat oen to 400 degrees.

Use a small baking dish, with lid, spray with cooking oil to coat bottom and sides.

Drain artichokes and chop into small pieces. In mixing bowl, combine all ingredients. Pour into
casserole, coer, bake at 400 degrees or 20-30 minutes, remoing lid or the last 5-10 minutes to
brown top.

Sere with 1riscuits, or any crisp crackers or irm bread.

1 can o artichoke hearts 398 mL,14 oz, drained and chopped
1 package o resh baby spinach, cooked and drained ery well
1,2 cup sour cream
1,2 cup mayo
4 oz cream cheese ,1,2 a block,, room temperature large handul
o Krat's 1ex-Mex shredded cheese
1,4 cup Parmesan cheese
1 tbsp o garlic, minced inely
llatbread or baguette, or sering

Di7ections:
Step J: In a large bowl, mix together the sour cream, cream cheese and mayo. Make sure the
spinach is ery well drained and gie it a rough chop. Add the spinach and artichokes to the bowl,
along with the Parmesan cheese and garlic.

Step 2: In a large, shallow baking dish, add this mixture and spread out. Cook or 15-20 minutes in
the oen at 325 l. 1ake out o the oen, add the shredded 1ex-Mex cheese and cook until melted
and golden brown.
Step 3: \hile the dip is still cooking, put the lat bread into the oen to allow it to heat through.
\hen the dip is ready, take the bread out as well and cut into pieces or dipping. Sere.


1aco Dip

1 8 ounce package cream cheese sotened
1 8 ounce container sour cream
1 package dry taco mix

\ith an electric beater, blend the aboe ingredients together and spread in a 9" x 13" cake dish.
Atop this mixture, spread 1 small bottle taco sauce, shredded lettuce, grated taco cheese, and diced
tomatoes. Sere with tortilla chips.

2 cups shredded cheddar cheese
1 1,4 cups our
Dash cayenne pepper
1,2 cup melted butter
1 jar o pimento-stued olies

In a bowl, combine shredded cheese, lour, and cayenne pepper. Stir melted butter into dry
ingredients. Using your hands, mix the ingredients until moistened. Drain and dry olies. lorm
cheese mixture around olie making sure olie is enclosed completely. Place olie-cheese balls on a
lined cookie sheet. Bake at 400 degrees or 20 minutes or until lightly browned.

\ou can substitute Colby, Monterey Jack, or Gruyere cheese i you preer.

Bread sliced

1 Large diced tomato
1 Small,medium diced Onion
1 -2 tbsp Olie Oil
1 tsp Basil
2 cloes Garlic, minced
Pepper and salt

I like to make it a couple o hours ahead o time so all the laors are well marinated. Place
spoonul on each slice o bread and cook in oen at 400 l or approx -10 mins.

Can also be cooked on the BBQ.

1 or 2 large can artichoke hearts packed in water ,adjust i you want it cheesier or less cheesy,
' cup mayonnaise ,or Miracle \hip,
1 - 8 oz pack cream cheese ,light i you want,
2 cloes garlic
cup grated parmesan cheese
' cup grated proolone cheese ,or mozzarella i that`s all you hae,
Pita chips, crackers or whateer you want to dip!

Preheat oen to 400 lahrenheit Mince garlic and saut in a medium sauce pan. Once starting to
brown, reduce heat to med-low and add cream cheese to soten. Drain and chop artichoke hearts or
place in a processor until chunky. Once cream cheese is sotened, add proolone cheese and hal
the parmesan cheese to the sauce pan and stir until melted. Add artichokes, mayonnaise and salt and
pepper to taste. 1ranser to oen sae dish, top with the rest o the parmesan and bake or 10
minutes ,or starting to bubble around the edges,. Let cool or a ew minutes and enjoy!







C7eamy talian Ga7lic Sp7ead

2 50 ml o cream cheese
2 garlic cloes - crushed ,minced
1 tsp. each dried oregano, parsley, thyme, sage
1 1bsp sot butter
1 1bsp. o white wine

\arm slightly ,microwae, the cream cheese and combine with all the ingredients until creamy but
not runny. Chill or a irmer spread or leae creamy - sere with crackers.

Chocolate Chip Cheese all

1 - 8 oz package o cream cheese ,sotened,
' cup butter ,sotened,
cup icing sugar
2 tbsp brown sugar
' tsp anilla extract
mini chocolate chips

Beat together the cream cheese and butter until smooth. Mix in icing sugar, brown sugar and anilla.
Stir in chocolate chips. Coer and chill in ridge or 2 hours. Shape cream cheese mixture into a ball,
wrap with plastic and chill another hour. Sere with chocolate waers.

I usually make this when going to a party. It is deinitely a crowd pleaser and something a bit
dierent. Very yummy too!

1 Pkg Philadelphia Cream Cheese ' cup Packed brown sugar
2 tbsp icing sugar 1Pkg 1oee Bits ,ound in chocolate chip isle,
1 tsp o anilla extract
1 Juice box Pineapple or Orange Juice
Granny Smith Apple slices

Mix brown sugar, icing sugar and cream cheese until smooth and blended. Stir in ' o the toee
bits, then garnish top o the dip with ' o the bag o toee bits.

Sere with apple slices soaked briely in pineapple juice to keep rom going brown.

1his is a simple ried bread recipe that is a gem or camping or een when you hae a tasty new jam
to try but a must or soaking up soup or stew. Lnjoy!

llour Siter
Baking powder Large Bowl
Salt \ok or large Pan
\ater 1ongs
Cooking oil ,anything will do accept olie, canola is best,

Steps:
1. Sit 3 cups o lour into bowl.
2. Mix in 3 tsp o baking powder thoroughly
3. Mix in enough warm water to make a moist dough that is ery sticky to touch
4. Need a little ,old to keep in air, into the centre o the bowl and let it sit to rise or 25-20 min
5. leat 3-4 cups o oil in pan till hot ,not smoking hot like J Lo,
6. Lightly knead dough on lat loury surace till an inch thick
. Cut into 5 by 5cm squares
8. Beore you ry, use your hands to spread the dough in a way that will increase surace area by
50 then shake o excess lour
9. lry till golden brown with only one lip
10.Lat while warm with real butter and loads o jam because now that you are married no one else
is looking at you

Shelby's 7ange !oppy Seed 7ead

Makes 2 Loaes

3 c. lour 1 ' c. milk
1 ' tsp. Salt 1 ' tbsp. Poppy seeds
1 ' tsp. Baking powder 1 ' tsp. Almond extract
3 eggs 1 ' tsp. Vanilla extract
1 1,3 c. oil 1 ' tsp. Butter laoring
2' c. sugar

Preheat oen to 350. Grease and lour 2 loa pans

\ith electric mixer, mix aboe ingredients or 2 minutes. Put into pans and bake approx 60-65
minutes. 1est with toothpick ater 55 mins. 1op should be brown. \hile bread is still hot puncture
seeral times with a ork and spoon on glaze. Cool loaes 30 minutes. Remoe rom pans.

Glaze:
Mix 1ogether the ollowing:
' c. orange juice
c. sugar
' tsp almond extract
' tsp anilla extract
' tsp butter laoring

\ou can also substitute lemon extract or almond in both the loaes and the glaze and use lemon
juice instead o orange in the glaze.

I hae also made this recipe with ' cup less sugar with no noticeable dierence and reduced the
amount o sugar in the glaze by ' cup.

1he butter laoring is an important ingredient and does make a dierence to the taste.

1 3,4 cups sel-raising lour
1,4 tsp baking soda
1,4 tsp salt
1,2 cup sugar
2 eggs
1,4 cup milk
5g butter, melted in microwae with the milk
1 cup mashed banana ,approx 2 bananas,
Optional 1,2 cup chocolate chips i Aaron is desering.

Sit lour, baking soda and salt into a bowl, and then add sugar.
Add mashed bananas to the warm milk and butter, then stir in the beaten eggs.
Mix the wet mixture quickly into the dry ingredients until just combined.
Spoon into a greased,lined 22 centimeter loa tin. ,Splash out on baking paper, Lindsay,
Bake at 180 C or 45 - 50 minutes
Leae in tin or 10 minutes beore turning out onto a wire rack.

Nanny's anana 7ead

1,2 cup eg oil
1,2 cup sugar
2 beaten eggs
3 mashed oer ripe bananas ,about 1 cup,
2 cups lour
1 tsp baking soda
1,2 tsp baking powder
1,4 tsp salt
3 tbsp milk
1,2 tsp anilla

1. Beat oil and sugar together. Mix in eggs and bananas.
2. In a separate bowl sit together lour, baking soda, baking powder, salt.
3. Mix wet and dry ingredients
4. Add milk and anilla
5. Place in greased loa pan and bake at 350l or 1 hour.

3 bananas
2 eggs
1 cup sugar
2 cups lour
1 tsp. salt
1 tsp. baking powder
1 tsp. soda
1,2 cup shortening
1,2 cup chopped nuts

Mash bananas. Add sugar and let stand 15 minutes. Dissole soda in about 1 tbsp. o water. Add
shortening to bananas and sugar, beat thoroughly. Add dry ingredients, soda, beaten eggs and
ground nuts. Stir only until mixed. Bake in greased loa pan 350 degrees or 50-60 minutes.

3 eggs
1 c egetable oil
2 c white sugar
2 c grated zucchini
2 tsp anilla
3 c lour
3 tsp cinnamon
1 tsp baking soda
' tsp baking powder
1 tsp salt
' tsp nutmeg

1. Beat eggs.
2. Add oil and sugar. Mix well.
3. Add grated zucchini and anilla. Mix well.
4. Combine dry ingredients in a separate bowl. Add to wet ingredients. Mix well.
5. Grease and lour 2 - 8 x 4 pans and bake at 325 l ,165 C, or 60-0 minutes.
6. Crust: ,optional, 1 c brown sugar, 1 c lour, 2 1 butter, 2 tsp cinnamon. Mix and drop in clumps
on top o batter.

1 Cup shortening ,1 good cup,
Mix the aboe with hands until it is similar to pastry.

1hen mix the 3 cups o diced rhubarb and the other 3,4 to 1 cup white sugar. Put 1,2 o this
rhubarb,sugar mixture in the bottom o a glass baking dish ,9 x 13,.

Roll out the dough and spread the rest o the rhubarb,sugar mixture oer the rolled out dough.
1hen roll it all up like a jelly roll. Slice into 1 inch thick slices and place with the cut side down on
top o the rhubarb mixture in the glass baking dish.

1hen mix: 1 cup brown sugar and 1&1,2 cup hot water & 1,4 cup butter & boil or a ew minutes.
1hen pour this oer the slices and bake at 35 degrees or 20 to 40 minutes, depending on oen.

OR

Instead o dicing the rhubarb, you can place the long stems o rhubarb on the dough, along with the
3,4 to 1 cup o white sugar and then roll this up like a jelly roll. Slice and place in glass dish oer
some diced rhubarb and then prepare the syrup mixture and pour this oer the slices.

Preheat oen to 300 l. Put a pan o water at the bottom o the oen.

Crust: Some recipes say to bake the crust beore adding the illing, but I don't usually do this.

Iilling: \ith a mixer, beat the whipping cream and sugar until smooth. Add the eggs, whipping
cream, and anilla. Continue beating until smooth and thoroughly mixed. lold in whateer goodies
you will be adding. Pour into crust. Place in the oen. Cook or approximately 55 minutes, or until
the edges are irm and center still moes slightly. 1urn o the oen, but leae the cheesecake in the
oen or 30 minutes, then remoe the cheesecake to cool to room temperature. linally, coer and
rerigerate. Chill or at least 16 hours beore sering.

1opping: 1op at least two hours beore sering. Place the chocolate chip, butter, and water in a
microwae sae bowl. leat or 30 seconds, and then stir. Continue to zap in 10 second increments,
stirring until smooth. Pour oer crust ,adding any goodies,, then return the cheesecake to the
rerigerator until ready to cut and sere. N1: Run the knie under hot water beore cutting.

1his is the simplest chocolate cake recipe I`e eer ound. It takes only one bowl, ie minutes, and
ery little patience or those amongst us that much preer the end goal ,eating cake, to slaing away
in a kitchen. 1he cake itsel is egan, but I usually make a chocolate butter icing to go with it. Boiled
rosting also draws lots o compliments with this cake as well.

ng7edients:
1 1,2 cups unbleached all-purpose lour
1 cup sugar
3 tablespoons unsweetened cocoa ,I usually add 5 or good measure,
1 teaspoon baking soda
1,2 teaspoon salt
1 teaspoon anilla
1 teaspoon inegar
5 tablespoons egetable oil
1 cup cold water

!7epa7ation: In a large mixing bowl, mix lour, sugar, cocoa, soda and salt. Make three wells in
the lour mixture. In one put anilla, in another the inegar, and in the third the oil. Pour the cold
water oer the mixture and stir until moistened. Pour into 8 x 8-inch pan. Bake at 350l. Oen or
25 to 30 minutes or until it springs back when touched lightly.

Now add 1 small can pumpkin - mix well.
Spread on two 8 x 8 greased pans or one 9 x 13 greased pan.
Bake or 25 minutes or until toothpick inserted in center comes out clean.

8 oz cream cheese
2 teaspoons anilla
1 box powdered sugar
Mix well and spread on cooled cake.

1his makes a lot o icing - I usually cut the ingredients in hal and that is plenty or the aboe

In large bowl, beat butter and shortening until light and luy. Add anilla and salt. Beat in
powdered sugar 1 cup at a time, scraping down sides o bowl. Add 2 tbsp milk, beat at high speed
until light and luy. Add enough additional milk or desired consistency.

1i 1his icing can be made up to two weeks in adance and stored in air tight containers in the
ridge. Bring to room temperature and beat beore using.

Spray a large wok or saucepan with non stick spray. Add onions and garlic. Cook about 5 mins.
Add chicken and cook 8-10 minutes ,until no longer pink,. Add soup broth, soy sauce, ketchup,
inegar, lemon juice, oil, brown sugar and 1abasco. Bring to a boil. Add corn starch and water
mixture. Cook and stir until sauce thickens, about 1 minute.

Add egetables. I sometimes put the carrots in a little ahead as they take longer to cook. Add rest o
egetables and cook until slightly sotened.

Steps:
1. Prepare the carbonara sauce while the pasta is cooking to ensure that the spaghetti will be hot
and ready when the sauce is inished. Because the sauce contains raw eggs, it is ery important that
the pasta is still ery hot when adding the sauce, so that the heat o the pasta cooks the raw eggs.
2. leat the olie oil in a deep skillet oer medium lame. Add the bacon and saut or about 3
minutes, until the bacon is crisp and the at is rendered. Remoe the bacon and set aside. 1oss the

1 cup corn syrup or honey
1 cup brown sugar
' cup soy sauce
Minced garlic

Di7ections:
Mix the sticky sauce by combining the ketchup, corn syrup, honey, brown sugar, soy sauce and
garlic. Bring mixture to a gentle simmer.

Place the chicken in a casserole dish so that the pieces o chicken it relatiely snug.

Pour sauce oer chicken. No need to coer with oil or lid.

1. leat the oil in a skillet oer medium heat, and cook the chicken pieces 5 minutes on each side,

the lentils and broth, and season with salt. Bring to a boil, coer, reduce heat to low, and simmer
20 minutes.

3 tabs toasted cumin seeds ,ground cumin is ine,
1 tab ground turmeric
1 hot green chili, thinly sliced
20 chicken drumsticks, skinned, small bone-end chopped o
800g ,2 cans, Italian or other tomatoes, mashed
600g ,2 cans, canned chickpeas, well-rinsed and drained
2 cups water
2 tsp salt
1 cup plain, unsweetened yoghurt
Coriander leaes to garnish

leat the oil to a moderated temperature and add the ginger, garlic and onions. lry gently until the
onion is sot and eerything is golden.
Add the cinnamon stick, cumin seeds, turmeric and chili, and ry gently or about 4 minutes, stirring
requently.
Add the drumsticks, mix well and allow them to color. Add the tomatoes, chickpeas, water and salt
and bring to the boil.
Simmer gently or approx 45 minutes. At this point it can go in the oen, say 10 C, i you`e
cleerly used a Dutch oen on the stoe top ,or stainless steel, - better than watching the stoe top.
Sere the curry in a big wide bowl ,or take it straight to the table,, with the yoghurt poured in a swirl
on top and sprinkled with plenty o coriander leaes. I I hae them I add toasted cashew nuts.

1. Rub the chicken breasts with the seasoning salt, coer and rerigerate or 30 minutes.
2. Preheat oen to 350 degrees l. Place bacon in a large, deep skillet. Cook oer medium high
heat until crisp. Set aside.
3. In a medium bowl, combine the mustard, honey, corn syrup, mayonnaise and onions. Remoe
hal o sauce, coer and rerigerate to sere later.
4. leat oil in a large skillet oer medium heat. Place the chicken breasts in the skillet and saut or
3 to 5 minutes per side, or until browned. Remoe rom the skillet and place the breasts into a 9
X 13 inch baking dish. Apply the honey mustard sauce to each breast, then layer each breast

2 lemons
3 tablespoons manuka honey
2 tablespoons olie oil or aocado oil
1 tablespoon dark soy sauce

4 large or 6-8 smaller skinless boneless chicken breasts
Salt and pepper to taste

1. Add chopped garlic, zest o one lemon, juice o lemons, honey, oil, soy sauce and thyme. Mix.
2. Place the chicken in a sturdy plastic bag. Pour in the marinade, then squeeze out as much air as
possible and seal the bag. Massage the sealed bag so the chicken is eenly coated with the

4 cups o cooked basmati rice

leat oil in skillet and cook chicken on medium heat with chopped garlic until chicken is 0 percent
cooked. Moe the meat to the side o the skillet with a spatula and ry the paste on high or 30
seconds ,stirring it at the same time,. Add in both cans o coconut milk, stir and reduce heat to
medium low. Add in remaining ingredients, coer and simmer or 20 minutes on medium-low -

8 turkey cutlets, pounded out slightly until about 1,4-inch thick

16 slices sage
8 sliced proscuitto or any kind o ham
1 cup chicken stock
2 tablespoons butter
1,4 cup lat-lea parsley, chopped, a handul

Di7ections:
Preheat a large non-stick skillet oer high heat with 2 turns o the pan o LVOO, about 2
tablespoons.
Lay the pounded turkey cutlets on a plastic cutting board and then liberally season with salt and
pepper.
Place 2 sage leaes in the center o each cutlet then top with the slice o proscuitto.




Roll up each cutlet on a diagonal.

Add the turkey rolls seam side down to the hot pan and brown on all sides.

Once the rolls are brown, turn the heat down to medium and continue to cook until cooked
through, about 5-8 minutes.

Once turkey is cooked through, remoe rom the skillet and add stock to the skillet, scraping up any
o the brown bits with a wooden spoon.

Bring up to a bubble and cook or about 2 minutes.

Add the turkey rolls back to the skillet and the butter and parsley, stirring and shaking the skillet
until the butter has melted.

Spray large wok or saucepan with non stick spray. Add Onions and Garlic. Cook about 5 minutes.
Add Chicken cook 5 - 8 min. Add soup broth, soy sauce, ketchup, inegar, lemon juice, oil, brown
sugar and 1abasco. Bring to boil add corn starch and water mixture. Cook and stir until sauce

and knies beore and ater working with the raw meat. 1rim and cut the chicken into small cubes,
coer and put aside. \ith a clean knie and board slice the onions into thin wedges ,lyonnaise,.
leat a large saucepan or rying pan and melt 2 to 3 tablespoons o butter until it is rothy. Add the
onions and the cinnamon to the pan and ry lightly. \hen the onions are sot, stir in the crushed
garlic and ginger. 1hen add the turmeric, chili and coriander, and saut oer a medium heat. 1he
spices are ried irst to release their maximum laor and this really enhances the dish. Add the

1. In large pot, brown the ground bee oer medium heat until thoroughly cooked. Drain at and
return to stoe.
2. \hile bee is cooking, dice all the egetables and set aside.
3. Once bee is cooked and drained, add the bottle o beer, scallions and seasonings and stir.
Allow to simmer oer medium-low heat or 5- minutes.
4. Add the peppers, tomatoes and chilies, mix in and allow to simmer or another 5 minutes.
5. Add the black beans and stir thoroughly. Add more seasonings to taste and increase heat to
medium to bring mixture to a boil.
6. Reduce heat, coer and allow to simmer or at least 2 hours, stirring occasionally to preent
sticking on the bottom o the pot. I liquid reduces and chili gets too thick, add more beer!
. Sere piping hot with shredded cheese and diced onions.

1. 1o make the crust, place lour in a large bowl and cut in the butter. Combine with your hands
,or a pastry cutter, until mixture looks like cornmeal. Add cold water bit by bit and mix to orm
an elastic but not sticky dough ,i too much water is added, mix in more lour to attain irmer
consistency,. Knead the dough or 2 minutes then roll out on a lightly loured surace to ' inch
thickness, or enough to line a 9` pie or cake pan. Grease the pan with butter, and then lay the
dough in, pressing it down along the bottom and edges and remoing any air pockets. Line the
pan,dough with parchment paper and ill with dried beans. Place pan in rerigerator or 30
minutes. Preheat oen to 35l,190C and lash bake crust or 10 minutes. Remoe beans and

1. Place inegar in a small, heay saucepan, bring to a boil oer medium heat. Cook until slightly
syrupy and reduced to 1 tablespoon ,about 4 minutes,. Set aside.
2. Bring the broth to a simmer in a medium saucepan ,do not boil,. Keep warm.
3. leat 1 tablespoon oil in a large saucepan oer medium-high heat. Add leek, saut 3 minutes or
until tender. Add rice, cook 2 minutes, stirring constantly. Stir in wine, and cook 1 minute or

1,2 green or sweet red pepper chopped
1 large carrot grated or chopped
1 stalk celery chopped
11,2 cups granulated sugar
1 cup apple cider inegar
1,4 cup water
2 tsp. celery seed
1,8 teaspoon salt

Mix sugar, inegar, water and salt together in a saucepan. Bring to boil or a couple o minutes to
dissole the sugar. Put in ridge to cool to at least room temperature. 1hen pour it oer the cabbage,
pepper, celery, carrot and celery seed.

Rerigerate salad at least 2 hrs. beore sering. 1his will keep in the ridge or seeral weeks.
\ou can adjust the proportion o sugar, inegar, and water to taste.
Celery and green,sweet red pepper are optional but highly recommended.
\ou may shred or chop the cabbage as preerred.

1,4 pound sharp cheddar cheese, shredded

Preheat oen to 35 l. In 2-quart saucepan oer medium heat, in hot butter, cook onion until
tender, about 5 minutes. Stir in lour and salt until blended, cook 1 minute. Gradually stir in milk
and cook, stirring constantly, until mixture thickens slightly. Remoe saucepan rom heat, stir in 1,4
cup shredded cheese. In shallow 2-quart casserole, arrange hal o the potato slices, pour hal o
the sauce on top, sprinkle with hal o remaining cheese, repeat. Sprinkle with paprika. Bake

Kneading the do:gh: On a lightly loured board with loured hands, old urthest edge o dough

1. Preheat oen to 400 degrees l ,200 degrees C,.

3. In a 3 quart saucepan oer medium heat, melt butter and stir in lour. Cook or about 1 minute,
until smooth and bubbly, stirring occasionally. Mix in milk, cream cheese, salt, pepper, and Dijon
mustard. Continue cooking until sauce is thickened. Add cooked macaroni and cheddar cheese.
4. Pour into a casserole dish. In small bowl, mix together bread crumbs, butter and parsley, spread

1. Pail o salt water. Ocean water is best, preerably rom 1atamagouche Bay, but i not aailable
make your own by adding 16 oz. o rock salt or coarse salt to 5 gal. ,500 gm. to 20 liters, o
resh water to match the speciic graity o seawater.

2. Pour 2 inches or so o salt water into a large pot, coer and bring water to a boil. Sae the rest
o the water or cooling the lobster ater they are cooked.

3. Place lie lobsters into the water and boil or 20 to 25 minutes or 1 ' lb lobster, less time or
smaller lobsters.

4. Cooked lobsters turn bright red. 1est or doneness when cooked the ront antennae will come
away i pulled gently.

5. Immediately cool the lobsters in the pail o cold salt water. Ice may be added i desired, or
colder lobsters, or they may be remoed ater a quick dip & sered warm.

1 red and green pepper, cut into 1 inch pieces

500 ml o cream ,light,, diided
1 lb o whole wheat linguine
salt and pepper
1 tsp o cayenne ,or more,
5-6 dashes o 1abasco sauce
1,2 tbsp o corn starch

Di7ections:
Step J: In a large skillet oer medium heat, add 1 tbsp o olie oil, and then add the garlic and white
parts o the green onions. Let this cook or a ew minutes until the onions hae sotened and when
you can really smell the garlic cooking.

Step 2: Season the raw shrimp with just a little salt and pepper. Add the shrimp to the pan and allow
the shrimp to cook or only a ew minutes. Remoe the shrimp before they are ully cooked into an
empty bowl, leaing the other stu behind. Cook the linguine according to its package.

Step 3: I needed, add another tbsp o olie oil to the
garlic and green onion mixture, and then add the red and
green pepper. Allow this to cook or a ew minutes, not
letting the peppers to get sot. Add 3,4 o the cream,
cayenne pepper and 1abasco sauce. Add the green tops
to the onions.

Step : Place the shrimp into the cream mixture. In a
small bowl whisk together the remaining cream and the
corn starch. Add to the pan and allow to thicken.

Step S: Add the cooked pasta to the mixture and mix together well. Sere immediately.

the baking dish. Put another layer o tomato sauce oer top o the rolls and bake.

1. Stir-ry the bacon and onion in olie oil or about 2-3 minutes. Add garlic and pumpkin and stir-

2. Pour in 3 cups o water, or enough to almost coer the pumpkin, but not all the way. Add the
chicken stock cubes, salt and pepper and bring to a boil.
3. Simmer or 5-10 minutes or until pumpkin is sot.
4. LL1 COOL. Add ladles ull o soup in to a blender and blend until smooth. Pour back into
pot and stir in a dollop o cream to make soup creamy. Garnish with a little parsley ,optional,.

linely chop the mushrooms, combine with lemon juice. Melt butter in large skillet, add onions and
saut.
Add mushrooms, bay lea, thyme, and cook stirring oten until the liquid eaporates ,takes a while,.
Blend in cream, chicken stock, salt, and pepper and bring to a boil. Reduce heat. Dissole conrstarch
in water, add to soup and simmer 20 minutes. Ladle into heated bowls and sprinkle parsley on top.

I you plan to make the soup and eat it later, I recommend preparing the whole recipe minus the

1 cup resh basil leaes

In a small saucepan bring inegar to boiling. Reduce heat to medium. Simmer, uncoered about 20
minutes or until inegar is reduced to 1,3 cup. Cool.

Diide tomato slices among our salad bowls or plates. Sprinkle with salt and pepper. Drizzle with
oil. Drizzle the reduced balsamic inegar oer tomatoes. Sprinkle with Pickled Red Onions, cheese

!ickled Red nions: In a medium saucepan, cook 1 cup thinly sliced red onion in boiling lightly

cider inegar,, 1 cup cold water, 2 teaspoons cumin seeds and 2 cloes garlic minced. Coer and
chill or 3 to 24 hours. Drain beore sering. Makes 1 cup.

Salt and reshly ground pepper

Cut the broccoli into lorets. Blanch in boiling salted water until barely tender, about 20 seconds.
Shock them in a bowl o ice. Drain and resere.

Combine all other ingredients, mixing well. lold in the broccoli. Season to taste with salt and
pepper.

. Once all ingredients are in the bowl, boil the orzo. It only takes about 5 min, and is terrible when
oercooked so keep a close eye out.
8. \hen orzo is cooked, add to the bowl, stir, and sere immediately.

1,3 cup apple cider inegar

1 cup mayonnaise or salad dressing

1. Place the potatoes into a large pot, and ill with enough water to coer. Bring to a boil, and cook
or about 20 minutes, or until easily pierced with a ork. Drain, and set aside to cool.
2. \hile the potatoes are cooking, whisk together 2 eggs, sugar, cornstarch, and salt in a saucepan.
Stir in the inegar, milk, and mustard. Cook oer medium heat, stirring requently, until
thickened, about 10 minutes. Remoe rom heat, and stir in the butter. Rerigerate until cool,
and then stir in the mayonnaise.
3. Peel the potatoes i desired, and cut into medium dice. Place in a large bowl, and toss with the
onion, celery, carrots, celery seed and hard-cooked eggs. Gently old in the dressing. Rerigerate
until sering. I personally like this to sit or at least a day beore sering to let the laors blend,
but you may sere it as soon as it is chilled.

Bake at 35 or about 10 minutes. Should be slightly browned on top and bottom. Cool on tray.

Bake 9-10 minutes or chewy cookie, 12-13 minutes or a crisp cookie.
Cool one minute on cookie sheet, remoe to wire rack.

dissoles. Add the peanuts and cook oer medium to medium high heat or about 15-20 minutes.

Remoe rom heat and beat in one teaspoon o baking soda. Mixture will oam up. 1hen quickly

1. In the top o a double boiler, combine 1,2 cup butter, white sugar and cocoa powder. Stir
occasionally until melted and smooth. Beat in the egg, stirring until thick, 2 to 3 minutes.
Remoe rom heat and mix in the graham cracker crumbs, coconut and almonds ,i you like,.
Press into the bottom o an ungreased 8 x 8 inch pan.
2. lor the middle layer, cream together 1,2 cup butter, heay cream and custard powder until light
and luy. Mix in the conectioners' sugar until smooth. Spread oer the bottom layer in the

2 boxes o instant chocolate pudding

Break up one layer cake in chunks on the bottom o the dish and then pour hal o the pudding
oer the cake pieces. Spoon globs o cool whip on the top then sprinkle broken bar oer top.
Repeat the procedure again cool and sere.

6. 1.5 cups o powdered sugar

In a large non metal bowl slice thin about a peck o green tomatoes,16 cups,, Next thinly slice 8 - 10
large onions ,at least 6 cups, and layer between tomatoes. Sprinkle coarse pickling salt all oer &
between the layers o tomatoes and onions ,a good 1,3 cup,. Coer and let sit oer night.

In the morning drain well, put in a large cooking pot and add: 3 cups white pickling inegar, 6 cups
white sugar and 1,2 cup pickling spices ,put spices in a piece o gauze and tie into a bag shape,.
Sprinkle a ew mustard seeds oer the ingredients ,not too many,.

Bring to a boil and simmer uncoered, stirring oten or 2 hours. 1omatoes and onions should be
clear like and mixture thickened a bit. Scoop into hot sterilized jars, seal with sterilized snap lids and
rings and then process illed jars in pot o boiling water or about 10 minutes. Lit out and place on
cloth to cool or 24 hours beore moing.
