Dynamics are how loud or soft the music is.

These dynamics are the quite simple, but you do sometimes get a ppp or a fff. These meaning pianissimo posible (softest possible) or fortissimo possible (loudest possible). Occasionally, more than three f's (sometimes called "fortondoando") or p's. Tchaikovsky indicated a bassoon solo pppppp in his Pathtiquesy Symphony.
