Ingredients
1 1/2 cups (190g) all purpose flour 1/3 cup (70g) sugar 1/4 teaspoon salt 4 teaspoon yeast 2/3 cup (155 ml) warm milk 3 tablespoons vegetable oil 1/2 teaspoon vanilla extract 1 large egg Topping 3 tablespoons (45g) butter, room temperature 3/4 cup (165g) brown sugar 1 teaspoon ground cinnamon Icing 1 cup (120g) powdered sugar 1-2 tablespoons milk or cream
Tools
8 x 8 inch (20 cm) square baking pan Large bowl Measuring cup Small bowl
Steps
1. Prepare a 8x8 inch (20cm) square baking pan with a thin layer of non-stick cooking spray or butter. 2. Mix the flour, sugar, and salt in a large bowl.
3. Combine the warmed milk and yeast in a measuring cup. Dissolve the yeast completely.
4. Combine the yeast milk mixture, egg, vegetable oil, and vanilla extract into the flour bowl.
5. Mix everything thoroughly. Pour the mixture into the baking pan. Set aside for at least 15 minutes.
6. Create the topping mixture. Combine the brown sugar, butter, and cinnamon together until you have a crumbly mixture.
7. Sprinkle the topping over the pan mixture. You can either swirl it in or lightly press it down.
8. Place the pan in the cold oven. You'll be baking it while the oven is preheating. Bake the mixture for 30 minutes at 350F/180C. The cinnamon bread should spring back up when lightly pressed. Set aside to cool for 30 minutes.
9. Make the icing by whisking the milk and powdered sugar together. Drizzle the icing on top of the bread.
10. Serve the cinnamon bread warm. Any leftovers can also be reheated in the microwave for a few seconds.
