VEGETABLE CHIPS

Ingredients: Medium-sized pieces of the following vegetables: Potato, Sweet Potato, Squash and Carrots. Salt and Pepper Cooking Oil Procedure: Wash and peel vegetables. Slice thinly about 1/16 inches thick. Place vegetables on a plate and sprinkle lightly with salt on both sides. Let the vegetables rest for 20-30 minutes to allow all the liquid to drain. Rinse them with cold water and dry well. Heat oil in a deep fryer and place the vegetable slices in hot oil and fry until golden brown 1-2 minutes. Remove chips with spoon and place on plate in layers. Allow to cool. Sprinkle with salt to taste.
