ABSTRACT The study was conducted to determine the effect of Aloe vera ( Aloe Barbadensis ) on the shelf-life and firmness of Tomatoes (Solanum Lycopersicum) and to find out if Aloe vera extract can be an alternative preservative. It sought to answer whether the shelf-life and firmness of the 40 sample tomatoes, under two different conditions, will be prolonged and maintained respectively. The researchers gathered fresh tomatoes and all the materials necessary. Afterward, the researchers extracted the Aloe vera gel. The extracted Aloe vera gel underwent Phytochemical analysis. The tomatoes were then grouped according to their respective set-ups ( A1, A2, B1 and B2). Application of aloe vera gel followed for the necessary tomatoes to be applied onto. After two weeks, the researchers conducted a survey for the evaluation of the shelflife and firmness of tomatoes. The researchers found out that the firmness and the shelf-life of the tomatoes treated are more maintained and longer respectively than the tomatoes untreated with Aloe vera extract are more preserved and longer respectively than the firmness and shelflife of the refrigerated and treated tomatoes. Therefore, lessens the expenditures in the industry of export and canning tomatoes. The tomatoes farmers were as well benefitted for the tomatoes will still be of high quality even though these crops were to be distributed to far places. The consumers are also benefitted for they are assured of consuming fresh and high quality of tomatoes.
