You also can add dried fruit or nuts for a different flavor. Choose milk or juice for a beverage. --Leftovers from last nights supper are quick and easy. SAVING SERIOUSLY BURNED COOKWARE I have another wonderful use for baking soda. It is great for removing the baked and burned on grease and crud from pots and pans. Simply fill the pan with water and add 1/2 to 1-cup baking soda and bake in a 350-degree oven for 2 to 3 hours. Allow to cool, and the grease will just lift off. This tip saved me from having to throw out a good quality roasting pan that I thought had been ruined by a careless roommate. After the baking soda treatment, a good 1/4-inch of burned grease came off and the pan was left as sparkly clean as the day I bought it! -Jennifer GROUND MEAT STRETCHER A way to stretch good ground meat is to add bread crumbs to the meat and hand mix in a bowl. Then form burger patties as usual and freeze. You can use leftover stale bread and dry in an oven. Grate it in a blender or by hand. I take this even further and add my own homegrown dehydrated onion and garlic into the mixture for flavor. The possibilities for additions are endless. -S. Heres an easy way to always have ice pops available for the kids. Its also a great way to use up fresh fruit before it goes bad and you have to throw it away. To make 4 pops, place 2 cups of cut up fruit, 1 tablespoon sugar (or whatever sweetener you prefer), and 1 teaspoon lemon or lime juice into your blender with a couple tablespoons of water to make a thick slush. Cover and blend until smooth. Pour into pop molds if you have them or small paper cups. Insert sticks and freeze until solid. VOLUNTEER FIRE AND AMBULANCE GRANT APPLICATIONS AVAILABLE SOON, SAYS CAUSER Harrisburg- Rep. Martin Causer (R-Turtlepoint) is encouraging volunteer fire companies and ambulance services throughout Pennsylvania to submit an application for the 2012 Volunteer Fire Company and Volunteer Ambulance Service Grant Program (VFCVASGP). The application period opens Sept. 5 and closes Oct. 20. The General Assembly recently adopted Act 78 of 2012 to reauthorize the grant program for an additional four years and increase the total grant funding available from $25 million to $30 million. The new law also adds approximately 35 career fire departments to the list of organizations eligible for grant funding. The grants may be used for construction or renovation of a units station, the purchase or repair of equipment, training or debt reduction. Grants to eligible fire companies will be contingent on their agreeing to participate in and report information using the Pennsylvania Fire Information Reporting System (PennFIRS). During the last decade, $3.2 million has been awarded to about 40 volunteer fire and ambulance companies in Cameron, McKean and Potter counties. The program is funded through state gaming proceeds. THE KITCHEN DIVA By Angela Shelf Medearis Gluten-Free and Easy As Can Be! Gluten-free is a term now appearing on food labels and often mentioned in health articles, but many people dont know what gluten is or why finding a gluten-free product is so important for some shoppers. My daughter, Deanna, was recently diagnosed as being gluten intolerant. Since she loves bread and pasta, this news was a big adjustment for her. I try to plan family meals with her condition in mind. Educating yourself about gluten is one of the best ways to make the correct food choices. Gluten is a protein found in the grains wheat, rye and barley. Oats also may contain gluten due to cross-contamination, which means they have come into contact with gluten during processing. When baking, gluten helps give structure, texture and strength to baked foods, such as bread. Most people can eat gluten, but in some people, gluten causes damage to the small intestine, making it hard to get nutrients out of food and into

the body. When nutrients cant get into the body, a person can become malnourished. This reaction to gluten is a genetic disorder called glutensensitive enteropathy, celiac disease or gluten intolerance. Symptoms can be different from person to person and can be confused with symptoms of other health problems. People of any age can develop gluten intolerance, but the disease usually is diagnosed in adults, about 10 years after symptoms first appear. The only treatment is lifelong avoidance of gluten. Once gluten is removed from the diet, the small intestine begins to heal, symptoms disappear and nutrients can once again get into the body. Because gluten is found in wheat, rye, barley and sometimes oats, anyone with gluten intolerance should avoid these grains and any products that contain them. In addition, foods that might come into contact with these grains or gluten also should not be consumed. If you are looking for gluten-free foods, start by reading the ingredients list on food labels to determine if they are gluten-free -- or made without

gluten. Identifying gluten-free products involves more than just looking for the words wheat, rye, barley, oats or buckwheat. Wheat also might be called durum, farina or semolina; gluten also can be found in additives, seasonings and flavorings. And a food originally gluten-free can come into contact with equipment contaminated with gluten or might be processed in an area that contains gluten. Finding gluten-free foods may seem like an impossible task, but once you know what to look for, shopping is a breeze. Always read labels to make sure each recipe ingredient is gluten-free. ZUCCHINI-PINEAPPLE 4 quarts diced or shredded zucchini 46 ounces canned unsweetened pineapple juice 1 1/2 cups bottled lemon juice 3 cups sugar Mix ingredients in a large saucepan and bring to a boil. Simmer 20 minutes. Fill hot jars with hot mixture and cooking liquid, leaving 1/2inch headspace. Adjust two-piece lids and process in a boiling water bath (15 minutes for half-pints or pints). ZUCCHINI PICKLES 2 pounds zucchini, sliced (about 8 small) 1/3 pound onion, quartered and sliced (about 1 small) 1/4 cup canning salt (2 cups sugar 2 tablespoons whole black peppercorns 2 teaspoons mustard seed 1 teaspoon celery salt 1 teaspoon turmeric 3 cups vinegar 1. Combine zucchini and onion in a large bowl. Sprinkle with salt and cover with cold water. Let stand 2 hours. Drain mixture, then rinse and drain again. Combine remaining ingredients in a saucepan and bring to a boil. Pour vinegar mixture over zucchini and onions and let stand 2 hours. 2. Bring all ingredients to a boil, reduce heat and let simmer 5 minutes. Pack hot zucchini and liquid into hot jars, leaving 1/4-inch headspace. Although slow, the tanks showed promise and hundreds more were ordered. On Sept. 17, 1923, a fire threatens the University of California at Berkeley, kills two people and causes $10 million in damages. Homeowners fought the flames with garden hoses and buckets, and students from the University of California pitched in, as the fire came right to the campus gates. On Sept. 13, 1936, 17-year-old Cleveland Indians pitching ace "Rapid" Robert Feller strikes out 17 batters in a game, setting a new American League record. Feller allowed just two hits to help his team to a 5-2 victory over the Philadelphia As. On Sept. 12, 1940, a collection of 600 prehistoric cave paintings and 1,500 engravings are discovered in a grotto near Montignac, France. The 5,000- to 17,000-year-old paintings consisted mostly of animal representations. The Lascaux grotto's main cavern is 66 feet wide and 16 feet high. On Sept. 14, 1964, writer John Steinbeck is presented the U.S. Medal of Freedom. Steinbeck had already received numerous honors and awards for his writing, including the 1962 Nobel Prize, and the 1939 Pulitzer Prize for "The Grapes of Wrath." He also wrote "Tortilla Flat," "East of Eden" and the novella "Of Mice and Men." On Sept. 18, 1987, cesium-137 is removed from an abandoned cancertherapy machine in Brazil. Junkyard workers, fascinated by the glowing blue stone inside and completely unaware of its dangers, distributed pieces to friends, relatives and neighbors. GAME COMMISSION LOOKING INTO DEER DEATHS IN SOUTHWESTERN PENNSYLVANIA Harrisburg- Pennsylvania Game Commission Wildlife Conservation Officers are investigating the cause of death for more than 35 white-tailed deer in Beaver and Cambria counties. Epizootic hemorrhagic disease (EHD) is suspected. Game Commission biologists recently submitted three samples for testing from deer found in Greene Township and Ohioville Borough in Beaver County (one male and one female), and Summerhill Township in Cambria County (one female) to the Southeastern Cooperative Wildlife Disease Study at the University of Georgia. The agency will continue to gather samples from other dead deer being found in other municipalities. Due to decomposition, samples must be collected within 24 hours of the animals death for the samples to be viable. Once the results are available, the Game Commission plans to release the findings to the public. While we must wait for test results to confirm just what caused these deer to die, at this time, we are suspecting that the deer died of EHD, based on field signs that we are seeing, said Dr. Walter Cottrell, Game Commission wildlife veterinarian. He noted that, earlier this month, EHD was confirmed in Oklahoma and Nebraska. EHD is one of the most common diseases among whitetailed deer in the United States, and is contracted by the bite of insects called biting midges. EHD usually kills the animal within five to 10 days, and is not spread from deer to deer. While EHD is not infectious to humans, deer displaying severe symptoms of EHD may not be suitable for consumption. Cottrell stressed that even though some EHD symptoms are similar to those of chronic wasting disease (CWD) - such as excessive drooling, unconsciousness and a loss of fear of humans - there is no relationship between EHD and CWD. Cottrell also pointed out that EHD should be curtailed with the first hard frost, which will kill the insects that are spreading the disease. He noted that EHD, unlike CWD, is a seasonal disease and the affected local deer herd can rebound quickly. The good news from this situation is that the public is reporting these sightings to the Game Commission, Cottrell said. Should the states deer herd be infected with more serious diseases, the Game Commission will need to rely on the continued vigilance of the public so that we can respond in a timely manner. Game Commission Southwest Region Director Pat Anderson is urging residents to report sightings of sicklylooking deer, particularly those found near water, by calling the Region Office at 724-238-9523. The Southwest Region serves Allegheny, Armstrong, Beaver, Cambria, Fayette, Greene, Indiana, Somerset, Washington and Westmoreland counties.
