culinary guide to the island of Bali. Its Christmas time and guests are gathering in Bali to enjoy their holidays, and of course all the amazing food and cocktails on offer. Turn the pages to read about Christmas customs around the world (p 24), and to find some of the special festive offerings to be savoured on the island. This month our cover features Bali Luna (p 40) a tropical fine dining experience at the Aston Bali Resort in Tanjung Benoa, where we enjoy a very pleasant degustation menu paired with fine wines. We also take a trip to Ubud and relax by the rice fields while dining on traditional local food at Janggar Ulam (p 16), then visit the inspiring Foundation Sjaki-Tari-Us (p 28) where we eat for a good cause! At Minami in Sanur we taste innovative,

Alison is a travel writer and self confessed food-lover. She has spent many years traveling the globe, immersing herself in foreign cultures and sampling local cuisine, applying her motto Everything should be tried at least once. Her heart has now been captured by Bali where she is happily indulging her favourite things; writing, traveling and discovering new restaurants
Menur describes herself as a part-time food lover and a full-time food friend. She enjoyed her exposure to many different restaurants during her year teaching Indonesian Language and Culture in Washington DC. Now back in Indonesia she has discovered that her pleasure in trying new food has deepened and she hopes to one day open her own restaurant.
Eve is the newest member to join the Lets Eat team and says her familys motto has always been live to eat, rather than eat to live. Aside from eating she also loves to write, travel, design and cook (although, admittedly that also involves eating.)

We make our way through thriving gardens of ornamental banana trees, cala lilies and potted bougainvillea and settle into cushions in a traditional style pavilion with high thatched roof. The setting is delightful, right on the edge of a flourishing lilly pond leading to rice fields that stretch as far as the eye can see. With so much greenery around us the mood can be nothing but serene. Balinese owners Putu Rusmiati and Wayan Palasara were originally in the furniture business and the five small gazebos, as well as the main joglo and the furnishings are crafted from
recycled teak wood, lending a distinct ethnic vibe to the surroundings. A round of refreshing drinks is definitely in order, starting with a frosty Es Teler, packed with ice, jackfruit, honeydew melon, avocado and grated young coconut deliciously sweetened with condensed milk. The Es Kelapa Muda is a super rehydrating whole green coconut, sweetened with lime and sugar syrup, while the Green Juice matches the vibrancy of the rice fields with its pleasant mix of green vegetables and pineapple juice.

Es Kelapa Muda Iga Bakar
The name Janggar Ulam refers to the Balinese bay leaf, an aromatic herb with a strong citrus perfume and mellow taste, which is used to flavour some of the sauces and soups. The typical Indonesian menu provides incredibly good value and focuses on Jimbaran-style seafood as well as traditional Balinese offerings of bebek (duck) and babi (pork.) Most items can be grilled or fried and come with a choice of rice and plecing water spinach, or French fries and lemon vinaigrette salad. Clams are a house specialty, served in their shells and floating in a rich, slightly sweet sauce of chilli, onion, garlic, candlenut, sweet soy sauce,
lemongrass, lime and coconut oil, which is just spicy enough to warm the senses without being overpowering. The same sauce coats the Iga Bakar, baby pork ribs served with crunchy fries and a side salad, and the Gurami Bakar. This popular fresh water fish has been sliced in half and grilled, the resulting crispy golden skin concealing a soft white flesh. It is served with a woven basket filled with banana leaf dishes containing a tangy sambal matah, a spicy red sauce, and a serve of water spinach with a very hot chilli sauce. BOTANICALLY kNOwN AS kAEMpFERIA GALANGAL, kENCUR IS A HERB FROM THE GINGER FAMILY AND IS ALSO kNOwN AS SAND GINGER. vERY SIMILAR IN AppEARANCE, kENCUR LOOkS LIkE LITTLE GINGER NUGGETS, ABOUTTHE SIzE OF A LARGE CLOvE OF GARLIC. TECHNICALLY, THEY ARE LESSER GALANGALE, A RHIzOME wITH A DARk REDDISH BROwN SkIN THAT YOU pEEL JUST AS YOU wOULD GINGER.
Native to South India, sand ginger is actually cultivated primarily in Southeast Asia and China mostly as a medicinal plant, but it is used as a spice in Malaysia, Singapore, and Indonesia. The stemless leaves usually grow in two and spread out flat on the ground in opposite directions. These leaves sprout from rhizomes growing in shallow soil. White and purple coloured flowers grow between the leaves. Both the leaves and rhizomes of kencur are aromatic and are popular in Indonesian dishes such Karedok, as they impart a more astringent flavour than ginger. How to grow? To grow kencur is not that difficult, you just need to buy the rhizomes in the market, which may already be showing new growth. If not, wrap them loosely inside some crumpled newspapers for sprouting to take place, which should take less than two weeks. Once new growth is seen, the rhizomes can be planted right away, but do take care not too bury them too deeply. A well drained, moist soil mixture is preferred. When planted outdoors, kencur should be grown in the shade. While on the balcony, kencur would benefit from being situated in an area with filtered sunshine for at least half a day. Kencur appears as a plant that hugs the ground and produces leaves that rests on the soil surface. The pretty flowers look like a white butterfly and you should be careful not to get water splashes onto them, as that will shorten their lifespan significantly. Beware of snails and slugs too as they love to eat the plants and watch out not to step on them if they grow near the garden pathways. Kencur thrives when it is grown in a humid environment, so no windy areas for them. Feed the plants regularly and keep the soil moist at all times. You will know when you have a happy, well-fed kencur plant, as it will have very big leaves that can grow to 15 cm in diameter. Menur

The Christmas meal is served the night before Christmas, and is often pork with crackling or goose, served with roasted or caramelised potatoes and plenty of gravy. A typical dessert is Risalamande, rice pudding served with cherry sauce or strawberry sauce, often with a whole almond hidden inside. The lucky finder of the almond is entitled to an extra present, known as the almond gift.
EASTERn EUROPE
In countries such as Poland and the Ukraine, the pre Christmas season is a time of fasting, which is broken on Christmas Eve with the serving of 12 meatless dishes. Spirits of the ancestors are honoured with their own place setting and food.
UnITED KInGDOM
In medieval England Christmas lunch was traditionally a main course of peacock or boar, until the French Jesuits introduced turkey in the 1700s. A common tradition is to use the turkey wishbone to make a wish. Two people tug on the bone until it breaks the one with the larger piece gets to make a wish. A rich, fruity Christmas pudding, often soaked in rum is the most popular dessert.

Turkey with all the trimmings, such as cranberry sauce, squash and stuffing is a common Christmas lunch, although ham and beef also appear on the menu. Homemade pies make a popular dessert, such as pumpkin, apple or mince. In Hawaii, turkey teriyaki is customary, while in New Mexico tamales might be served, and Virginia is famous for oyster and ham pie.
MEXICO
Common dishes enjoyed across Mexico on Christmas Eve include ample fresh fruits, salads and different variations of meat stew, such as pozole, made with pork and hominy in red chilly sauce. In the north of Mexico tamales make a very traditional lunch, often served with crumbly cheese. Dessert might be atole (a thinned hot pudding) with buuelos (fried flour tortillas sprinkled with sugar and cinnamon), or sweet tamales filled with fruit.

The Christmas feast is served on the night of the 24th, typified by roast turkey served with fresh vegetables, bowls of colourful rice, and platters filled with ham, fresh salad, exotic fruits and brazil nuts. Cakes make a popular dessert, including Italian style Panettone.
HOLLAnD
A typical Dutch tradition is known as gourmet, where the host prepares finely chopped vegetables, meats, fish and prawns, then people gather in small groups around a gourmet-set and use a little frying pan to cook and season their own food. Everything is accompanied by different salads, fruits and sauces. The origin of this tradition is thought to date back to the days when Indonesia was a Dutch colony.

Traditionally in Bali mental disabilities have been related to karma, and families with children suffering from down syndrome and autism have felt stigmatised, with no where to turn for support. The non profit, Dutch-founded organisation, Foundation SjakiTari-Us was set up in 2006 to break down these barriers, with a motto Break the silence! Our children are not less, but differently gifted. The Ubud branch of the foundation (there is another centre in Singaraja) provides practical support for around 40 Balinese children, 11 teenagers and their families. While the children receive basic education and essential life skills within a safe and nurturing environment, their parents have the opportunity to meet other families who share similar experiences.

Nasi Campur
In a unique addition to the program, Sjakis warung is a work-learn diner where some of the teenagers can also learn to cook, serve and host which creates an enormous sense of pride and achievement. The restaurant serves up good value, tasty food and gives visitors a chance to learn about the foundation and to visit the shop filled with paintings and masks made by the kids, as well as handicrafts donated by some of the parents. You can also catch some of the classes in action. As we eat lunch the dance class starts and the stereo belts out Gangnam Style and Hammer Time and there are smiles and laughs all round as the teenagers shake it up on the dance floor. The two-story dining area has a rustic charm, with tiled floors, timber furnishings and walls decorated with photos of the kids. In homage to the Dutch founders, tables are adorned with wooden tulips painted in bright colours by the children. Food is simple but well prepared. I really enjoy the Nasi Campur which includes a good, crunchy
tempe manis, light and fluffy perkedel (corn fritters), tofu, vegetables and a mild sambal. The Gado Gado is equally good, brimming with tofu and bean sprouts and coated in an aromatic peanut sauce. The Chicken Cordon Bleu has been deep fried to dark golden crunchiness and served with French fries. We also have a sweet Honeydew Melon Juice, a refreshing Mango Juice and finish with a fragrant Crepes Suzette. Eating nice food is always a pleasure, but even more so when you are eating for a good cause, and the foundation is a true inspiration. Here we see people power in action with a group of dedicated western volunteers and paid Balinese staff who really are making a difference. Aside from eating in the warung and buying items from the gift shop you can support Sjaki- Tari-Us with donations (financial, or development material) or by sharing your knowledge and ideas. Portabella is the new kid on the block, serving up tasty, authentic Italian dishes prepared with local produce. Executive Chef Vittorio Negri is the Italian maestro in the kitchen, sharing his broad experience and love of Mediterranean gourmet cuisine. The atmosphere is homey with an indoor and outdoor setting and classic Italian touches, including some sensational antique chairs. The air conditioned interior has earthy tones, with big doors of recycled wood and views of the open kitchen with a wood fired oven. We start our meal with drinks that provide interesting twists on classic cocktails. The Berry Merry Mule is mixed with berries, vodka and homemade ginger beer and has a light and refreshing taste, while the Coconut Mojito, adds
coconut liquor to the original rum and mint recipe, creating a smooth flavour that contrasts with the crunchy, tasty garnish of caramelised coconut flesh. The Brainstorm, grabs my attention with its dark coffee colour and coffee beans floating on the frothy mix of espresso, tequila, and coffee liquor. The arrival of a Seafood Platter is timely, and makes a great sampler to accompany aperitifs. Crispy focaccia is surrounded by condiments like semi-dried tomatoes, tuna tartar, olives, artichokes, marinated mahi-mahi, smoked salmon, prawn and calamari fritti. The Arancini are equally delicious, risotto and vegetables balls coated in bread crumbs, served with a side of sizzling sweet and spicy mayonnaise with chili.

Tuna Vulcano
The main specialties of Portabella are Ossobuco, a juicy and tender beef or veal shank served on a bed of creamy saffron risotto, and the Tuna Vulcano, with a medium tuna fillet coated with sesame, bread crumbs, and pan seared to a perfect golden colour. It is served with caponata, Sicilian ratatouille and mashed black olive, and is attractively presented and well savoured. For dessert, we chose the house specialty, creamy Tiramisu which is rich with the flavour of mascarpone and coffee, but soft enough to melt on the tongue, and makes a lovely ending to a lovely lunch, well spent in this comfortable Italian restaurant. Portabella has its own public access so you can save time and skip the hotel security gate when you drop by to enjoy a quick lunch or a leisurely dinner. Menur

Batu Kalis a la carte menu is not ambitious but is definitely a crowd pleaser, suitable for a casual, well priced meal in the prime location of eat street. Children are welcome and well catered for, and you can also bring your own wine (without being charged a corkage fee) definitely a plus considering the high price of alcohol on the island. The bistro opens at 7am with a giant breakfast buffet including continental, American and Indonesian offerings. Lunch is an informal affair, with Indonesian favourites like Sate Ayam and Chicken or Seafood Curry in coconut milk, while western style comfort food includes Duck Soup, BLT, Chicken Parmigiana, and Burgers.

We have a Club Sandwich served classic style and well stacked with a triple layer of chicken, boiled egg and salad, and plenty of French fries on the side; and a Nasi Campur which comes with a cone of rice, a rich and hearty beef rendang, sauted snake beans, spicy shredded chicken and crunchy tempe penyet. Dessert is a lush Chocolate Fondue, with skewered apples, strawberries and bananas to dip in a rich warm chocolate sauce.

The dinner menu is a little more expansive, ranging from Beef and Vegetable Pie and Chilli Chicken served with salsa, avocado, rocket and fries, to Seared Snapper, Gado Gado and Nasi Goreng. A good selection of drinks includes milkshakes and mocktails including an icy cool and very refreshing Lemon and Mint or an aptly named Pink Pineapple. Fruity cocktails include Mango
Daiquiri, Strawberry Crush, and Lychee Martini. We try a couple of the specials. The Tequila Splash mixes pineapple and lime with a good measure of tequila, while the Bali Sunrise is a softer and very pleasant mix of rum and guava juice. Alison

The introduction of a four-course degustation menu paired with wines chosen by the newly appointed sommelier amply reflects the shift in style. Stylish tableware and courteous service add elegance, while the deliciously cool walk-in wine cellar allows guests to browse for wine. An understated colour scheme of greys, blacks and whites allow the vibrant surrounding scenery of lush foliage and deep blue sea to take centre stage and we take a seat on the terrace cooled by whirring fans and a sea breeze and order some tropical cocktails to get us in the resort mood. The international a la carte menu runs the full spectrum from Lobster and Prawn Salad and Char Grilled Rib Eye to Mixed Satays and Nasi Goreng, but we are happy to sample the degustation menu, starting with Pan Seared Sea Scallops. The subtle flavour of two dainty Japanese scallops is enhanced with a dollop of tangy pickled relish,

and a dousing of creamy sauce with just a hint of curry. A well chilled glass of Juve y Camps Brut Cava makes a sparkling accompaniment. The Deep Sea Gindara Fillet is soft, flaky and drizzled in a smooth cream cheese sauce flavoured with a sprinkle of crunchy tobiko. It is served on a bed of angel hair carrot the sweetness of the carrot mellowed by a touch of pesto. The Medallion of Beef Tenderloin is tender and rare, topped with slices of fois gras, a swirl of creamy mashed potato, edamame beans, sweet baby carrot and a sculpted ring of crispy potato. We wash it down with Casa Vella DEspiells, a full bodied Spanish Cabernet Sauvignon. Our dessert, Mini Rum Baba combines deliciously soft flaky pastry filled with a sweet white chocolate mousse infused with a splash of Cointreau. The sweetness of the cake is well balanced with a bitter dark chocolate sauce, tart berriesand mango coulis. Alison

While many are familiar with the elegant Japanese restaurant Minami in Ubud, not a lot of people know that there is also a more casual beachside branch in Sanur. While the menus differ the seaside version offers more of a tropicalised Japanese fusion, there is the same emphasis on organic freshness and subtle variations in taste. Tucked into a corner of the sprawling Segara Village Hotel, and directly accessed from the promenade, Minami On The Beach gets a coastal makeover with a simple white washed open air pavilion overlooking the sea.

I have always thought that Japanese food lends itself well to fusion and find the menu packed full of enticing dishes, all attractively served on a selection of glass and wooden platters. Interesting options from the tapas menu include the homemade Kunming Tofu which is deliciously soft and silky and has quite a spicy kick. It is served fresh with slices of tomato and komangi Balinese lemon basil. There is also a mildy flavoured Tofu Teriyaki, as well as dainty One Bite Mini Burgers coated in a sweet sauce and tip of wasabi, served on a wooden skewer.

Alongside classic sushi, sashimi and ramen dishes are variations, such as Tempura with Camembert and Chicken, Cheesy Bonita Sushi Rolls, with pickled daikon, cream cheese and katsuo-bushi, and a salad of Five Grains and Rice. The tasty Hijiki Salad is served in a coconut, brimming with mildly flavoured seaweed, freshly grated coconut, carrot, cucumber, sunflower seeds and cashew nuts. A dressing of soya sauce, sesame, wasabi and Japanese vinegar is served on the side. The Chicka Pina Sushi Rolls are light and fragrant, with pineapple and basil leaves adding
a tasty twist to the chicken, carrot and cucumber filling. Stuffed Squid is salty and tender and packed with bean sprouts in a sweet spicy sauce. From the daily special board we choose the Snapper which has been lightly pan fried and seasoned with a wonderful mix of sesame oil and sake, and served with crunchy fried garlic and deliciously creamy potato croquettes. Chef Paul Lewis is cooking up a storm with his team when we interrupt him to do an interview. The storm in question is a wide array of mouth watering Balinese-inspired dishes for Le Mridien Bali Jimbaran, where he is now leading as the Executive Chef. The Brisbanite was a self confessed bad boy, until an eventful meeting with a friend who persuaded him to try cooking. I never looked back, he says. After finishing his TAFE degree in Brisbane, he cooked in various establishments around Australia, including Crown Casino in Melbourne and Burswood Entertainment Complex in Perth. During his two year stint as Executive Sous Chef at Marriott Renaissance, Kuala Lumpur, he cooked for the Chane des Rtisseurs gathering in 2010, preparing gourmet feasts for international figures like Richard Branson and Beyonce. Jumeirah, Abu Dhabi was his last stop before Bali. Chef Lewis is immensely interested in Asian cuisine so it is no surprise that he will bring his passion for excitingly flavoured street food to the tables of all three restaurants that he is in charge of at Le Mridien Bali Jimbaran. You can find Es Teler in street stalls and restaurants across Indonesia, or follow these simple directions and make it at home we are even including a dairy free version for vegans and those with lactose intolerance. The basic Es Teler includes avocado, jackfruit and young coconut flesh but any other fresh ingredients are welcome, dont be afraid to use your creativity and experiment.
Step by Step
Step 1: cut the jackfruit + young coconut flesh into thin strips about 1/4 inch in width, place in a large bowl. Step 2: Drain jar of nata de coco, add the cubes to the bowl with the other ingredients. Step 3: Halve avocados, remove pits, cut into a 1/2 inch dice. Step 4: Gently mix everything to combine. Step 5: At this point, you have a big bowl of room temperature fruit not too appetising, especially on a hot day. Add several cups of crushed ice to the bowl to cool things down a bit, which will dilute the sweetness of the fruit. Step 6: To bring some of that sweetness back to the Es Teler, add 5 to 8 tbs of sweet condensed milk to the bowl. Start with a little and stir in gently, adding more slowly until you reach the desired sweetness. Dairy Free version use Cocopandan syrup and coconut milk diluted in 50% water, adding more cocopandan syrup to increase the sweetness. Step 9: Ladle out the Es Teler into individual cups or bowls, making sure each one gets some of everything. The Es Teler is ready to serve now, it might not have alcohol, but it tastes so good you will probably find yourself craving more. Getting Creative: Free your mind and add some other ingredients like Seaweed, fermented melon, tomato, agar-agar, watermelon, pear, or jelly. www.letseatmag.com

The Plumbers Arms is brought to us by the owner of Scallywags (Gili Trawangan) and The Beach House (Echo Beach.) This quintessential English pub, located on the busy road to Canggu opened its doors in March and quickly earned a reputation as the place to go after work to have a pint (for those of us who actually work here on the island!) A combination of a classic, wood panelled pub-style interior, sidewalk tables, and a spacious outdoor seating area in the backyard have proved to be a winning combination. A big screen playing beloved English football and other sporting events adds to the popularity with expats living in the area. Following the great English tradition, a hearty Sunday Roast is also available weekly. The soundtrack is Brit classics, and the venue is decorated with vintage wooden stools and matching tables. On one side, the wall is covered with English newspapers, while the others features random British paraphernalia, like framed pictures of famous plumbers, like Ozzy Osbourne.
