High in fiber, omega-3s and protein, Chia Seeds can add a nutritional boost to all kinds of meals and can help you lose weight too. You can incorporate Chia Seeds into all sorts of raw treats like salads, smoothies, and my famous Jonny Chow. Check out some of my other Chia-favorites:
Sweet Chia Smoothie (serves 1) Ingredients 1 small apple 2-3tbsp chia seeds Banana and 1/4 cup blue berries 1 scoop (21 grams) whey protein powder
INSTRUCTIONS: Blend the apple and banana together using a blender or food processor. Once well blended, transfer the mixture into a bowl or large glass and stir in the chia seeds and berries. Let smoothie soak for at least 10 minutes before consuming.
Cool Cucumber-Chia Salad (Great for BBQs!) (serves 2) Ingredients 1 large cucumber, thinly sliced 1/2 yellow sweet onion, sliced 4 tbsp. rice vinegar 1/2 tbsp. Xylitol Salt to taste (unrefined, organic sea salt) tbsp. chia seeds
INSTRUCTIONS: Combine all ingredients except for chia seeds in a bowl and let sit for an hour. Sprinkle with Chia seeds before serving and enjoy!
Chia Chicken Salad (serves 4-5) 2 roasted eggplants (or favorite roasted vegetable) 2 grilled chicken breasts (locally grown, organic) 3 tbsp chia seeds 5 basil leaves, ripped 5 mint leaves, ripped 8 cherry tomatoes, quartered 1 small cucumber, diced Juice of 1/2 a lemon and 1/2 an orange Rind shavings of 1 lemon 2 tbsp sunflower seeds (raw, organic) 2 tbsp olive oil Salt (unrefined, sea salt) and pepper to taste 50 grams goat cheese
INSTRUCTIONS: Put all raw ingredients into a bowl while roasting eggplants and grilling chicken. Combine olive oil, lemon/orange juice and lemon rind together in a separate bowl. Add eggplants to mixture and drizzle with dressing mixture. Stir in Chia and sunflower seeds. Season to taste.
