Woodford Reserve Double Oaked is matured to perfection in handcrafted barrels created at Woodford Reserve's own cooperage. The barrels are uniquely toasted and charred to create the rich avor and color characteristics that are so distinctive in Double Oaked. Full-bodied with a long, rich nish Woodford Reserve Double Oaked is meant to be savored neat, straight out of the bottle, or with an ice cube. "Maturation in a new, charred oak barrel provides Woodford Reserve with all of its natural color and a great deal of its award-winning avor. This Double Oaked expression has been uniquely matured in two separate, custom crafted barrels," said Chris Morris, master distiller for Woodford Reserve. "The second was deeply toasted before its light charring. The double barreling of mature Woodford Reserve in this unique barrel allows the spirit to extract an additional amount of soft, sweet oak character." The rst Woodford Reserve barrel is crafted from oak that has seasoned out of doors for nine months and this is completely
toasted and charred on the inside like no other whiskey barrel in the world. The second barrel has been toasted for more than twice as long as the rst ll barrel and is then very lightly charred - again unique amongst all the world's whiskey barrels. The secret to the Double Oaked character is in the second barrel. A custom crafted barrel with a heavier toast allows avors of honey, cream, vanilla to be magnied and a light char gives elegant sweet aromatic notes.

Hand-harvested alpine herbs mingle with ancient bitter roots and spicy dried fruits in a symphony of aromas and avors that recall the mystery of old world alchemy. This exquisite aperitif bitters strikes a remarkable balance of alluring aromatics and bittersweet avors that will inspire the adventurous imbiber to the last sip. Carefully-selected spices, herbs, and roots are steeped by hand in small batches.

What is it that sets Pierde Almas apart from all the others? We still bake our Agave Hearts for up to ten days in earthen ovens. We still mill them under a great stone wheel drawn by horses. Fermentation - even in these impatient times is slow, careful and chemical-free. Distillation takes place in a wood-red, serpentine copper alembic whose design hasnt changed appreciably since the Moors occupied the Spanish Peninsula. The hearts of the magueys, known as pias, are shorn of their foliage and baked for up to ve days in earthen pit ovens. Once removed and allowed to cool, the pias are crushed under a horse-drawn millstone and
placed in wooden vats for an unhurried, 100% natural fermentation. Fermentation is complete within four to seven days, depending upon ambient temperatures. The resulting mash, or tepache, is then twice rened in a copper serpentine still. Percentage of alcohol per volume uctuates depending upon the maguey varieties used and can vary from lot to lot due to changes in environmental conditions. The range for the Espadn and Do-ba-dan varieties usually falls between 50% and 53% alcohol/ volume. Tobal produces mezcal with a range between 42% and 48% alcohol/ volume.
PIERDE ALMAS is a hyper-gourmet, artisan-made, small-batch mezcal produced in the southern Mexican state of Oaxaca from 100% naturally fermented agave. There are four varieties available on the market derived from four distinct species of this majestic member of the lily family: Espadn, Do-ba-dan, 100% wild Tobal and 100% wild Tobaziche. We also produce a fth, exceedingly rare Christmas mezcal known as Mezcal de Pechuga, which, in accordance with its ancestral recipe, is triple-distilled in the presence of wild fruits, almonds, anise and a wild turkey breast.
