National Health and Fitness Day Activities


Next week is National Health and Fitness Week, and State University is planning activities to help the university community celebrate. The University will offer free on-site biometric screenings that will include Body Mass Index (BMI), blood pressure, and cholesterol and glucose screenings. Munch n Learn events will discuss topics such as heart health, diabetes, stress management, gender-specific health issues, and what to do with your screening results. A variety of other activities are also planned during the week, including:

Your Eyes Need To Be Healthy Too!


An annual vision exam should be part of your health regimen. Vision exams allow your ophthalmologist or optometrist to assess several aspects of your vision. The visual field test checks for gaps in your peripheral vision. An ophthalmoscopy allows your eye doctor to see inside the back of your eye, which helps detect changes in the retina. These changes might indicate diabetes, high blood pressure, or other health problems. A tonometry, or air puff test, tests the pressure inside your eye. This identifies patients at risk for glaucoma.

Healthy Recipes
Potato Soup 12 servings 4 cans fat free low sodium chicken broth 1-32 ounce package southern style hash brown potatoes 1 package low calorie, fat free country gravy mix Bring broth to a boil in a large pot. Season as desired. Add hash brown potatoes, simmer 30 minutes. Add gravy mix until thickened. Sugar Free Fudge 1/4 cup reduced-calorie margarine 2 ounces unsweetened chocolate 8 ounces light cream cheese 1 cup Splenda 1 teaspoon vanilla extract 1/2 cup chopped walnuts Melt margarine over low heat. Add chocolate and stir just until melted. Remove from heat and stir in sweetener and vanilla. Combine chocolate mixture with cream cheese and beat until smooth. Stir in nuts and spread mixture into a lightly greased 8 inch square pan. Refrigerate until firm. Cut into 1 inch squares. Store in the refrigerator.
