Breakfast

Breakfast is the first meal of the day, which literally means breaking the fast of the night. Before 18-century, breakfast was had in the morning and comprised of food that provided immediate nourishment and energy such as cold meat, pate, cheese and beer. In Victorian era, it developed into a prolonged family meal, serving ham, omelette, roasted partridge, kedgeree, followed by fruits, honey, and biscuits, and served with tea. In France, breakfast was known as petit djeuner. Unlike the British, the French had a light breakfast consisting of a cup of tea, coffee or caf au lait or hot chocolate with buttered toast, croissant, bread or biscottes spread with jam or preserves or honey. Breakfast is the most important meal of the day for the customers as well as for the establishment. The in-house guests, more often than not have breakfast in the hotel. The service provided during the first meal of the day can set the tone of the day for the guests. Types of breakfast In our hotels, we serve continental, American, English, Indian and Japanese breakfasts. Continental breakfast It is also known as Caf complet or Th complet and the components are: Choice of fresh fruit juice or canned juice (Orange, sweet lime, pineapple, pomegranate, mango, guavas, papaya, tomato) Choice of breakfast rolls or toast (Choice of croissant, muffins, brioche, Danish pastry, doughnuts or toast served with preserves and butter) Tea or Coffee English breakfast It is an elaborate meal consisting of many courses and takes a longer time to serve as compared to other type of breakfasts. In recent days, it has been made much simpler and shorter by clubbing courses or eliminating certain courses. This adaptation varies from one establishment to another. The components of traditional English breakfast are: Choice of fresh fruit juice (Orange, sweet lime, pineapple, pomegranate, mango, guavas, papaya, tomato) Choice of stewed fruits (Prunes, apricot, plums, pear, figs)

Choice of cereals (Porridge, Cornflakes (etc.), Muesli and served with hot or cold milk) Choice of fish (Poached Finnan Haddock, Pan fried or grilled Kipper, Kedgeree) Eggs to order (Fried, poached, scrambled, boiled and omelette served with ham or bacon or sausages and black pudding and vegetable accompanied grilled tomatoes, creamed mushrooms on toast, baked beans, breakfast potatoes, fried bread) Choice of cold meats (York Ham or Ox tongue) Choice of breakfast rolls or toast (Choice hard and soft bread rolls or toast served with preserves and butter) Tea or coffee or hot chocolate American breakfast Americans are known to have a very heavy breakfast followed by a light lunch and a heavy and early dinner. The components of American breakfast are: Choice of fresh fruit juice (Orange, sweet lime, pineapple, pomegranate, mango, guavas, papaya, tomato) Choice of stewed fruits (Prunes, apricot, plums, pear, figs) Choice of Cereals (Porridge, cornflakes, cream of wheat, oatmeal, wheat flakes, muesli served with hot or cold milk) Eggs to order (Fried, poached, scrambled, boiled and omelette served with ham or bacon or sausages and hash brown potatoes and grilled tomato) Waffles or hot pancakes (Served with golden/ maple syrup or honey and melted butter) Baked beans on toast Breakfast steak Chicken liver on toast Mushroom on toast Choice of breakfast rolls or toast (Choice of croissant, muffins, brioche, Danish pastry, donuts or toast served with preserves and butter) Tea or coffee

Indian breakfast The components of Indian breakfast are: Choice of fresh fruit juice (Orange, sweet lime, pineapple, pomegranate, mango, guavas, papaya, tomato) Choice of fresh fruit Puri Bhaji Stuffed Paratha Masala Dosa/ Idli Sambhar/ Uttapam Lassi or Masala tea or coffee Japanese breakfast The rising sun Grilled Salmon accompanied with fried bean curd Miso Soup Vegetables Roasted Seaweeds Japanese omelette Green Tea Pickle The morning market Japanese rice porridge Miso soup Marinated white fish with sesame seed Japanese omelette Green Tea Pickle This is served in a Bento Box with soupspoon, chopstick and napkin Service of the breakfast Breakfast menus are presented to each guest and the order is taken. Order must be taken very carefully, guests preference of type of preparation and choice of items must be noted very carefully. As soon as the order is placed, tea/ coffee is served. Breakfast is served course wise. Cutlery/ flat ware is changed/ refreshed as per the courses. Tea and coffee should be replenished. It must be ensured that toasts are served hot and should be replenished when finished. Breakfast is a very important meal of the day, must be served quickly, without the guest having to wait for long and cheerfully!
