Preperations
In a saucepan over medium heat combine butter and olive oil. Once butter has melted add garlic and cook one minute.

Stir in rice, cook until rice becomes slightly translucent. Stirring occasionally to make sure rice doesnt stick to the bottom of the pan. About 4 minutes. Rice may brown slightly. Stir in chicken broth, bring to a boil. Reduce heat to medium-low. Cover and let cook 20-25 minutes. Carefully remove lid, fluff rice with a fork and sprinkle with chopped parsley.

n the meantime, heat the oil in a skillet and stir-fry the garlic until golden brown, then stir-fry the onion until translucent. Add the tomatoes and cook until they soften. Add this fried mixture to the saucepan with the rice water. Add the daikon radish and bring to a boil again. Reduce the heat and simmer until the daikon is tender but still crisp, about 7 minutes. Add the shrimp, chilies and watercress, and cook until the shrimp turn pink and the vegetables are wilted, about 5 minutes. Season with the fish sauce and pepper.
