CHICKEN KARAY
INGREDIENTS: 1 kl. Chicken cup Vegetable Oil 1 tsp Salt (or according to taste) 2 tbsp Chili powder 15 pcs Red Tomatoes 1 clove Garlic 2 tsp Ginger Chili fingers Spices: 6 pcs 8 pcs. 2 tsp 2 sticks 1 tsp. Note: Cardamom Cloves Black pepper Cinnamon Cumin

Blend garlic & ginger to make a paste. Pound all the spices together.

PROCEDURE: Put vegetable oil onto the pan. Add garlic & ginger paste. Fry until brown then add the chicken. Add the pounded spices, chili powder and salt. Then simmer. Add tomatoes and chili fingers. Cover until tomatoes are cooked.

FISH MIXTURE
INGREDIENTS: 1kl Fish (large fish preferably with white meat) 3 tbsp Chili powder tsp Turmeric Less than tsp of cumin Garlic & ginger paste Vegetable oil for frying Salt to taste PROCEDURE: Mix altogether except for the ginger & garlic paste. Then add to the fish meat and let it soak. Fry the meat onto the ginger & garlic paste. Then serve.

CHICKEN BERYANI
INGREDIENTS: 1 kl Chicken 2 cups Yogurt 2 glasses Basmati rice 1 tbsp salt (for the chicken) 2 tbsp salt (for the rice) Garlic & Ginger paste (blended) Food color (orange) Water
Spices:
1 tbsp 10 12 pcs 2 3 sticks 3 pcs Cardamom Cloves Cinnamon Bay Leaves

Sauce:
tsp Cumin 1 pc Cucumber sliced 2 tbsp Onion minced 1 cup Yogurt 1 tbsp Chili powder Salt to taste Note: Mix altogether

PROCEDURE: Put vegetable oil to the pan. Add garlic & ginger paste then saut the chicken. Add the spices. Let the spices sink into the chicken then add water. Let it simmer then low the fire and add the yogurt. Add salt to taste. Cover. When the mixture has dried up, add 2 glasses of water and add 2 tbsp salt. Add little pounded cardamom, the basmati rice and food color**. Wrap the cover with towel and let it steam for 20 mins or until the rice is cooked (steam has come out from the towel). **just put the food color atop the rice, do not mix.

CHICKEN YOGURT

INGREDIENTS:
Vegetable Oil 2 kls Chicken 4 medium White Onion chopped 14 15 pcs red Tomatoes 2 tbsp Garlic & Ginger paste Yogurt Water Salt to taste Spices: 1 tsp Cumin 2 3 sticks Cinnamon 6 8 pcs Cloves 1 tsp Black pepper 2 3 pcs Cardamom 1 tbsp Chili powder

PROCEDURE: 1. Put oil in the pan. Saut the onions until brown. Put off the fire then take out the onions from the pan. 2. Blend altogether the spices cumin, cinnamon, cloves, black pepper, cardamom, chili powder, tomatoes, onions, water. 3. Put chicken, garlic & ginger paste to the oil then mix. Add salt to taste. Mix well then add blended mixture. Then cover for 10 minutes. Add in yogurt then cover again for 10 15 minutes or until the chicken meat is tender.

VEGETABLE 1
INGREDIENTS: Sayote Vegetable Oil 1 onion Chopped 2 3 Tomatoes quartered 1 tbsp Ginger strips tsp Black pepper pounded PROCEDURE: Saut tomatoes, ginger strips. Add in sayote, black pepper and chicken cube. Then cover. Add bell pepper, chili finger if sayote is almost cooked. Then cover with a low fire. 1 pc Maggi chicken cube 2 pcs Bell pepper cubed 2 3 pcs Chili finger Water Salt to taste

VEGETABLE 2
INGREDIENTS: Vegetable oil White onions sliced Upo Minced Garlic Black pepper powder Tomatoes PROCEDURE: Saut onions then add upo. Add in garlic then stir. Add black pepper then cover for 5 mins. Add in tomatoes and Maggi cube then cover. Add water and stir every now and then. Cover again for 5 mins. Then add chili fingers and bell pepper. Add salt to taste. Let it boil then add a little water. Maggi cube Chili finger Bell pepper Salt to taste Water

BEEF STEW
INGREDIENTS: 2 kls. Beef ribs (soaked in water for 2 hours to take out the blood) 1 kl White onions chopped 1 pc Whole garlic peeled 1 Chili powder 1 tsp Salt 4 glasses Water tsp Black pepper whole 10-15pcs Cloves 2 3 pcs Cinnamon sticks 2 cups Yogurt cup Butter Ginger strips Vegetable oil PROCEDURE: Put kl chopped onions then beef then add the other half kilo of onions, garlic, ginger strips, chili powder, salt, water, cinnamon sticks to the pressure cooker. Then wait until it sounds then start the 20 minute cooking time after the sound. (NOTE: DO NOT open the pressure cooker if the red button is still up.) Add in black pepper whole and cloves. Let it boil to dry up the water then add the yogurt. Add in oil and butter after the yogurt has sink in. Then stir & cover for 5 mins then put off.
