The fruits are harvested at three-quarters of the full ripe stage and processed within 24-36 hours. The production will be carried out by peeling and slicing converting into banana chips. It is important to remove all impurities prior to processing of products. For peeling of green banana or plantains, the fruits are immersed in hot water. The processed bananas are then dried in a countercurrent tunner dryer for 7-8th hour, with an inlet temperature of 60 Celsius and outlet temperature of 45%. The drying will be carried until the banana chips real final moisture temperature content of 8% then they are grinded. 1) Laboratory and Facilities Currently, the existing facility is located at the School of Food Technology, Faculty of Industrial Technology, USM. It comprises of two (2 ) laboratories namely analytical laboratory and processing laboratory for flour processing and baking activities. 2) Proposed Expansion of Facilities Due to capacity and space constraint, the proposed expansion will be relocated at sains@usm satellite facility at Bayan Lepas, Penang Free Trade Zone area, Penang. The proposed facilities will occupy 6,000 square feet and comprise of four (4) laboratories. The production laboratories will include three (3 ) major products namely bread, noodle and innovative ingredients application laboratories and one (1) analytical laboratory. These laboratories will be funded by Grants from the relevant agencies. The application laboratories will be equipped with the latest processing and analytical equipment which capable of developing and assessing new ingredients for the food industry. For the application laboratories, the equipment to be made available are a full test bakery consisting of spiral mixers, planery mixers, dough moulders and bun divider, triple deck ovens, pastry sheeters, programmable proofer, bun forming machine and packaging machine. The laboratories will also be equipped with cookies and noodles pilot scale plant. The analytical laboratory will be equipped with textural analyzer, color meters, rapid visco analyzer, farinograph, entensograph, fermentor, bio-reactors, HPLC and GPLC. 3) Focus Areas The Company recognizes the essential need to undertake research and development (R&D) to provide it with competitive advantages, thus ensuring its business sustainability and success in the long term. The Companys research and development activities are focused on continually improving its existing products in terms of taste, freshness, flavours and packaging process time, and creating new products with the aim of satisfying its target customers.

Briefly describe the Prof. Dr. Zainul Fadziruddin Zainuddin was born in Rantau Negeri management team's track Sembilan on 1st April 1961. He received his early education at the record* Bukit Bintang Boys Primary School in Petaling Jaya and secondary education at the Malay College of Kuala Kangsar from 1974 to 1979. Subsequently he received a Federal Scholarship to further his studies in the United Kingdom in 1979 where he took A-levels at the Darlington College of Technology. He was awarded the National Young Scientist of the Year in 1993 by the Ministry of Science, Technology and the Environment. He was promoted to Associate Professor in 1994. In 1997, he was asked to lead a team to establish a new faculty in USM, the School of Health Sciences. Dr Zainul had the distinguished honour of becoming its founding Dean. Dr Zainul was promoted to Professor in 2003. Briefly describe the Prof Zainul was seconded in 2006 to BiotechCorp to assist in the management team's National Biotechnology Policy.
