For longer storage, or if your grains have multiplied and you have extra, you can dry your kefir
grains. Rinse them in dechlorinated water and
lay the grains on a piece of parchment paper
somewhere out of the way. They will dry within a
few days and can be stored in the fridge for up to
a year. To reactivate, begin brewing as usual but
expect them to take a few batches before fully
culturing again.
