Banana Crumb Muffins

INGREDIENTS: 300 g all-purpose flour 2 egg, lightly beaten 7 g baking soda 7 g baking powder 5 g salt 5 bananas, mashed 240 g white sugar 120 g butter, melted 115 g packed brown sugar 25 g all-purpose flour 0.5 g ground cinnamon 25 g butter

DIRECTIONS: 1. Preheat oven to 375 degrees F (190 degrees C). Lightly grease 10 muffin cups, or line with muffin papers. 2. In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder and salt. In another bowl, beat together bananas, sugar, egg and melted butter. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups. 3. In a small bowl, mix together brown sugar, 2 tablespoons flour and cinnamon. Cut in 1 tablespoon butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins. 4. Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean.

(might take a little longer, depending on how full the muffin tins are with the batter).

12. Cool, drizzle glaze over or frost with buttercream frosting.

ground cinnamon.

5. Cut in 3 tablespoons butter or margarine with pastry blender or fork until mixture resembles
coarse crumbs.

6. Set aside. 7. Make muffin batter. 8. Combine flour, granulated sugar, brown sugar, baking powder and salt in large bowl. 9. Stir in milk, egg, butter and lemon peel. 10. Stir in 1 1/2 cups white chocolate chips and blueberries. 11. Spoon into prepared pan, filling almost full. 12. Sprinkle with Streusel Topping. 13. Somewhere along the way I picked up a little spiral bound muffin cookbook, which I have used ever since. It has THE most delicious muffin recipes in it, and our favourite is Marilyns Blueberry muffins - which I made this afternoon. I reckon Ive made thousands of blueberry muffins using this recipe - its so quick and easy, and they taste delicious. Heres the recipe (just multiply the quantities for more muffins!); youll need three mixing bowls for this recipe: TEMP: 400F (I use 180-200C) TIME: 20 mins MAKES: 12 large muffins

2 eggs 1 cup milk 1/4 cup melted butter or margarine 1.5 cups all-purpose flour (Australia: plain flour)

3 teaspoons baking powder 1/2 teaspoon salt 2 tablespoons white sugar 1 cup blueberries (or 1 can if you dont have fresh) 1/4 cup all-purpose flour 1/2 cup white sugar

METHOD:
1. In a small bowl, beat eggs, milk and butter. 2. In a large bowl, mix flour, baking powder, salt and the 2 tablespoons of sugar. 3. Stir the liquid ingredients in the small bowl into the dry ingredients in the large bowl. 4. In the third bowl, mix together the blueberries with the remaining sugar and flour. 5. Gently fold the blueberry mixture in to cake mixture in the large bowl. 6. Fill muffin cups and bake at 400F for approximately 20 minutes.

BTW, I found that you can still get the book online from at least one secondhand bookseller. The authors are Bidinosti and Wearring and the book is Muffins: a cookbook; my copy was published in 1982 by Muffins Publishing, Inc. and is the 9th printing (1984).
