I mean the weather not the Prime
Minister, obviously! Although Mr
Cameron was certainly very warm
when he greeted the winners of the
Tesco Mum of the Year Awards at
Downing Street. Even when they
quizzed him on why the government was not meeting their various

than the weekend and thats sharing
it with our family and friends. Getting
together for a good meal, prepared with
love, feels like a celebration even if the
only thing were raising a glass to is the
absence of rain. Gathering around a
table or the barbecue for great food is
one of lifes simplest pleasures and
weve found some recipes that are
bound to please even the fussiest of
eaters. So invite grandparents, cousins,
your extended family and your
next-door neighbours its a great
chance for younger and older
generations to get out in the fresh air.
Then, for after-lunch entertainment,

Whole lime and chilli fish Score
8 prepared and gutted whole sea bass (from
the fish counter) down to the bone several times
with a sharp knife. Fill the slits with the slices from
3 limes and a pack of fresh coriander. Rub the
outside of each fish with a spoonful of Red Thai
Curry Paste. Drizzle 3 tbsp sesame oil over both
sides of all the fish. Cook on the hot barbecue
rack (or under a hot grill) for 5-6 minutes on each
side, or until opaque and the flesh flakes easily
with a fork. Serve the fish on a platter topped with
plenty of fresh coriander and basil sprigs, finely
shredded salad onions and strips of deseeded red
chilli, with soy sauce and extra lime wedges on

Olive oil spray, for cooking
1 small onion, finely diced
1 red chilli, deseeded and
finely chopped
1 tsp ground cumin
2 tsp sesame seeds
x 30g pack fresh mint
1 medium egg
50g (2oz) fresh white
breadcrumbs
125g (4oz) feta
2 tsp harissa paste
10 tbsp 0% fat Greek
yogurt
8 wholemeal pittas or
tortillas, to serve
watercress, to serve
1 Bring a medium pan of
water to the boil. Add the
peas, bring back to the boil
and cook for 1 minute, then
drain and leave to cool.
Meanwhile, heat a couple of
sprays of olive oil in a small
frying pan over a low heat.
Add the onion, chilli, cumin
and sesame seeds and cook
for about 5 minutes, stirring
until softened. Leave to cool
for a couple of minutes.
2 Spoon the onion mixture
into a food processor
together with the drained
peas, mint leaves, egg,
breadcrumbs and 50g (2oz)
of the feta. Blitz to make a
coarse paste. Season to
taste with salt and pepper.

mince (normal or lean)
8 salad onions, trimmed
and finely chopped
3 tbsp jerk seasoning
olive oil spray, for cooking
mixed salad, to serve
1 Place 24 wooden
bamboo skewers into a
bowl of cold water and
leave to soak for at least
30 minutes, or overnight
if possible this will stop
the wood from burning on
the barbecue.
2 Place the beef, salad
onions, jerk seasoning
and a pinch of salt into
a large bowl. Using your
hands, mix the ingredients
together until really well
combined.
3 Shape a fairly large
tablespoonful of mixture
around the end of one of
the prepared sticks to
make an oval shape about
4-6cm long dipping your
hands in cold water first
will make shaping the
meat easier. Set aside
and continue with the
remaining mixture to
make 24 beef skewers.
4 Spray the meat with olive
oil to give it a light coating,
then cook on the barbecue
for 12 minutes, turning
occasionally, until well
browned and cooked all
the way through. Serve with
the mixed salad.
TIP To cook without a
barbecue, preheat a griddle
pan or your grill to a medium
heat. Cook the skewers for
3-4 minutes on each side.
Cover the wooden sticks
with foil if they start to burn.
Sizzling Jamaican beef skewers
3 With slightly damp hands,
shape a tablespoon of the
mixture into a mini burger.
Repeat with the rest of the
mixture to make 24 falafels.
Put onto a plate, cover and
chill for at least 20 minutes
or for up to 24 hours.
4 When chilled and ready
to cook, place a piece of
foil (about 30 x 40cm) on
to a medium-temperature
part of the barbecue rack
and spray with a generous
amount of olive oil. Leave
the foil to warm up for a
couple of minutes.
5 Cook the falafel in a
single layer for about 3-4
minutes on each side, until
golden. Meanwhile, swirl
the harissa into the yogurt.
Warm the pittas or tortillas
on the barbecue for a
minute on each side, then
fill with the watercress,
falafel, remaining feta and
harissa yogurt to serve.
TIP To cook without a
barbecue, warm 2 tbsp
olive oil in a frying pan
over a medium heat and
cook the falafel in batches
for 2-3 minutes on each
side, or until golden.
Warm the pittas or tortillas
according to the
instructions on the pack.

Warm potato salad
with watercress pesto
Cut 15kg (3Ib) new potatoes
(Jersey Royals are great if you can
find them) in half lengthways. Boil
in lightly salted water for 15-20
minutes, or until tender. Meanwhile,
put 2 packs watercress in a food
processor with a handful of pine
nuts, some grated Parmesan, the
finely grated zest and juice from
1 lemon, small clove of garlic, a
good splash of extra virgin olive oil
and some sea salt and pepper.
Blitz to make a coarse paste.
Drain the cooked potatoes and
return to the pan. Add the pesto
and mix well until coated. Serve
immediately. Serves 8.
Hot fruity rice salad
Cook 2 x 250g packs wholegrain
rice and 2 x 250g packs Uncle
Bens Express Long Grain &
Wild Rice according to pack
instructions. Meanwhile, place a
large handful of spinach leaves
in a food processor with 2 large,
red, deseeded chillies, a bunch
of trimmed salad onions, a small
handful of fresh coriander leaves,
juice of 1 lime, a splash of extra
virgin olive oil and some salt and
pepper. Blitz to make a paste. Cut
4 stoned peaches into chunks.
Combine the hot rice, peaches and
dressing in a large bowl, adding
some roughly cubed feta just
before serving. Serves 8.

Thai coleslaw with coconut mayo
In a large bowl, mix 3 tbsp light coconut milk,
3 tbsp lighter than light mayonnaise, 4 tbsp
Sweet Chilli Dipping Sauce, a little lime juice,
salt and pepper. Mix well. Finely shred
1 pack Chinese leaf, a few salad onions and
a deseeded red pepper, then coarsely grate
1 large, peeled carrot. Mix the vegetables into
the dressing and serve. Serves 8.

500g (16oz) strawberries,
hulled and quartered
300g (10oz) raspberries
200g (7oz) blueberries
175g (6oz) caster sugar
1 tbsp lemon juice
9 sheets fine leaf gelatine
75ml (3fl oz) elderflower
cordial
Summer berry fruity jelly
1 Put 200g (7oz) strawberries,
125g (4oz) raspberries and
80g (3oz) blueberries in a
medium pan with the sugar,
lemon juice and 700ml (1pts)
cold water. Warm gently until
the sugar dissolves and the
liquid starts to simmer.
2 Cover and simmer until the
fruit is very soft (5 minutes).
3 Meanwhile, put the gelatine
leaves in a bowl and cover with
cold water. Leave to stand for
5-10 minutes until soft.
4 Strain the hot juice through a
sieve into a bowl dont press
the fruit through the sieve, as
this will turn the jelly cloudy.
5 Squeeze any excess water
from the gelatine and add
the leaves to the hot juice.
Stir until completely dissolved
then mix in the cordial. Leave
to cool to room temperature.
6 Pour a third of the jelly
mixture into a 2-litre jelly
mould. Scatter with a third
of the remaining fruit. Cover
and place in the fridge for
30 minutes or until lightly set.
7 Pour over half of the rest of
the jelly mix; scatter with half
the remaining fruit. Chill for
30-60 minutes until lightly set.
Add remaining jelly and fruit,
cover and chill overnight or for
at least 6 hours. Serve with ice
cream or single cream.

Barbecued hot chocolate
& fruit fondue Cut some
mixed fruit (try pineapple, arge
mango, strawberries, bananas and
kiwis) into 2-3cm chunks (keep the
strawberries whole, removing the
tops), peeling and removing stones
where necessary. Thread the fruit
alternately onto skewers and, if you
like, sprinkle with a generous handful
of desiccated coconut. Cover and
chill until ready to cook. Meanwhile,
break 300g (10oz) milk chocolate
and 100g (3oz) plain chocolate
into a pan with a heatproof handle.
Add 6 tbsp double cream. When
youre ready to eat, place the pan
and skewers onto the barbecue.
Cook the fruit for 2-3 minutes
on each side or until golden, by
which time the chocolate should
have melted in the pan. Mix well
to combine it with the cream, then
serve in the middle of the table
with the fruit skewers ready to dip
into the fondue. Serves 8.

You will need:
toilet tissue cardboard
tubes; poster paint in
assorted colours; UHU glue;
coloured string; rolling pin;
scissors; clothes peg;
paintbrush; newspaper
1 Press the cardboard tube
flat lengthways. Re-flatten
with a rolling pin to give
the folds a crisp edge.
2 Cut the tube into six
equal sections to make
six oval petals.
3 Lay the first ring flat
and lengthways on your
work surface and apply
a drop of glue 15cm in
from one folded edge.
Place a second ring on
top so it is lying flush with
the ring below it. Repeat
for the remaining rings.
Hold the stack together
with a peg and let dry.
4 Fan out daisy and glue
last two rings together.
5 Once you have made
the desired number of
daisies, paint them and
leave to dry on newspaper.
6 Thread ribbon or string
through one petal of
each daisy and hang up.

cardboard tube; wool yarn

1 Using a craft knife,
carefully cut the paper
towel cardboard tube
into six equal sections.
An average 21cm-long
tube allows you to make
six rings, each one about

2 Use a drop of glue to
stick the end of one of
the wool yarns to the
inside of one of the rings.
3 Allow the yarn to dry
completely before carefully
winding the yarn widthways
around the outside and
inside of the cardboard
ring. Once the stripe is

yarn and glue the end to
the inside of the ring.
4 Repeat these steps with
contrasting yarns until the
ring is completely covered.
Glue the end securely to
the inside of the ring.

You will need:
empty glass jars; matt
emulsion or acrylic paint;
stick-on flower decorations;
paintbrush; newspaper
1 Remove the labels and
glue residue from the jars,
then wash and dry them.
2 Stir the paint and pour
a generous amount into
the jars. Put on the lids
of the jars and swirl
the paint around until the
interiors are evenly coated.
Use a paintbrush to finish
the inside of the rims.
3 Pour the excess paint into
a bowl and place the jars
upside down on newspaper
to dry depending on the
thickness of the paint, this
can take up to 48 hours.
4 Once the jars are dry,
decorate with stick-on
flowers. If you are going
to use any of the jars as a
vase for fresh flowers and
fill it with water, ensure the
paint isnt water-soluble.
Or place a plastic cup
inside the jar and
fill with water to
prevent the inside
of the jar becoming wet.

Divide players into two
teams. Each team then
takes it in turn to use their
bodies to spell out words
for the other team to guess.
Start with simple words
such as dog, then move
on to longer words. If you
have only a few players, get
one person at a time to use
their body to spell out the
letters one after another
to make a word. The team
that guesses the most
words wins the game.
Snapped
All you need for this game
is a camera with a timer.
Sit in a circle with the other
players. Set the camera
timer at the longest setting
available, point the camera
at yourself, then pass it to
the person on your left.
The other players do the
same until the camera
takes a picture.
Whoever gets

must share

forfeit before

cases in assorted colours;
flexible drinking straws;
scissors; craft knife
1 To make the base of
each flower, fold a green
petit-four case in half,
then in half again,
and then in half again.
2 Cut the curved end
into a sharp point with
scissors. Unfold and
flatten out into a circle.
Cut a hole in the centre.
Repeat steps 1 and 2, as
the base has two layers.
3 For the centre, fold a
petit-four case (not green)
as before, and cut the
curved end into an arc
for a softer petal shape.
Unfold and make a hole
in the centre of the case.
4 To make the outer petals,
repeat the previous step but
use a larger cupcake case.
5 To assemble, thread two
green petit-four cases onto
a drinking straw to make
the leaves, followed by the
larger cupcake case as
the petals, and then the
centre made from another
coloured petit-four case.

When was the
last time you
embarrassed your
kids and how?
DC: Oh thats easy! It was when I
gave my daughter Nancy a karaoke
machine one that links to the internet. So
I was singing a Beatles song and realising
it was going very, very badly. I discovered
then what karaoke has given to the
world is to teach people who think
they can sing really well,
that they cant.
What
did you
want to be
when you were at school?
DC: My daughter asked me
that only this weekend. Ive
always loved the countryside,
and I once thought I wanted
to be a lorry driver. I definitely
didnt have a burning
ambition to be
Prime Minister.
If you
were no
longer the Prime
Minister, what would you do?
DC: Oh gosh, have a holiday! What
would I do? Well, I helped my neighbour
with his lambing this weekend and I must say
that gave me more pleasure than anything Ive
done for a long time. He lost one of his ewes and
so we were bottle-feeding some lambs. Then a
sheep got stuck in a swamp. Shed gone in to
rescue her lambs. We all jumped in up to our
waists and helped get the ewe out and shes
been named Swampy. Im not saying
Im going to be a farmer, but I do
love the countryside.
What
legacy
would you like to
leave behind for your children?
DC: I thinka country that is fairer,
thats kinder, where people give more. I would
hope that...we can build a bigger society, where
people feel they can play a larger part. Its not just
what you get out, its what you put back in. I see in all
sorts of ways the Olympics were a classic example
that even in difficult times, this is an amazing country
where people are incredibly generous, compassionate,
tolerant and decent. We just need more of that
because [it represents] the sort of society we should
be trying to build. And its what all of you [the
Mum of the Year 2013 winners] in your
different ways have been doing.

How will
you encourage
more women into
business and help create
more role models for girls?
DC: I think its all about schools.
I still remember the people
who came and gave talks to us,
and I dont think politicians or
business people do it enough.
We may think what we do is
unremarkable, but to a kid at
school everything is remarkable.
I remember listening to people in
business or whod fought in the war
and just hearing their storiesso all
your lessons are going on and then
suddenly your eyes are lifted up
to something else.

DC: I had a history teacher called Michael
Kidston who was so passionate about the
subject that he imbued a love of it in all the people
he taught. I remember him reading us the end of
a Gladstone biography when he read about how
Gladstone died he shut the book, I looked up and he had
tears pouring down his cheeks. I thought anyone who
can be that passionate about someone who died 100
years ago He made it exciting and interesting and I
can still remember what his lessons were like. He had
a great sense of humour and would do things that
teachers arent allowed to now. If you werent
concentrating this wooden block would fly
across the room. So there were all sorts
of slightly unpolitically correct
ways of teaching!

The Paralympic
Games really
changed the public
perception of people
with disability. How can
you cement and build
on that legacy?
DC: Weve made some
promises about maintaining
funding at the elite level,
which I think is important
because those elite
Paralympic athletes send
such a signal to everybody
else. At the school-sport
level and community
funding weve got some
more work to do to get
that right.
We will shortly be making
an announcement but I
think its about taking the
immense achievement and
saying lets keep going and
do that all over again and
make sure were even more
inclusive in sport than we
have been up to now. I think
we proved that Paralympic
events can be the match
of mainstream sporting
events and so we should
say to other sporting
organisations, have you
thought about that?
Mireille Williams, from
Bristol, helped to rescue
her local preschool from
closure and saved seven
teachers jobs.

Why do you think
people struggle to
volunteer within their
community and how can
you improve this?
DC: One of the reasons
people dont volunteer as
much as they would like,
I feel, is taking that first
step. People think, Id like
to, but who do I ring? What
do I do? Will I be good
enough? There are also
issues about liability and
bureaucracy, which we are
dealing with. Its now easier
to set up a street party and
hold a fundraiser. Weve got
rid of a lot of red tape. I think
one thing we need to dois
get youngsters right at the
start while theyre in school.

I believe in our
communities. I
want to do more can
you explain what you
mean by the Big Society?
DC: Its complicated
because there are lots of
different bits to this. Some
people think Big Society is
just about volunteering or
just about fundraising.
It isnt its about much
more than that. Its also
about devolving power to
a local level so people who
want to do more in their
local communities can...
I just think the idea of
more volunteering, more
charitable giving, more
local organisations, more
communities coming
together to fix problems
the more of that the better.
Now I call it the Big Society
you can call it anything you
like. But it exists
Ann Maxwell, from
Dalkeith, Midlothian,
used the experience of
her sons epilepsy to set
up a charity to help other
sufferers.
Q

My son Muir is an
able-bodied 16 year
old, but falls into the camp
of profoundly learning
disabled and will require
24/7 care for the rest of his
life... Might there ever be
a prospect of ring-fencing
funds for high-quality
institutional care?
DC: I dont think that it
should be either direct
payments or good
institutional care for those
who need it. You need to
have, particularly for the
most severely disabled,
high-quality institutional
care for those families
who cant cope
any more
at home.
Sometimes it
just becomes
impossible.
And Ive had
constituency
cases like this.
Loving mums
who gave up
everything for
their children,
but [for
whom], in the
end, the condition was just
so extreme the whole family
was breaking down,
and some element of
institutional care was
important.
So you need to have
that institutional care. But
I would argue that the
system of whats called
individual budgets and direct
payments is a good system.
Because the individual
budget means you try to
bring together everything
that your child needs, and
the direct payment means
that you should get as much
of that as you want in a cash
payment to you, so you can
then arrange the things that
you need whether its getting
some respite care here or
getting a nurse over there.
Margaret Aspinall, from
Liverpool, lost her son in
the Hillsborough tragedy
and has spent the past
23 years campaigning
for the truth as part of
the Hillsborough Family
Support Group.

Some people are
starting to say theyd
like some form of safe
standing brought back at
football matches. We
never want standing [at
games]
brought back
into this
country ever
again. Id
like to ask
what your
governments
feelings are
on standing
in football
stadiums?
DC: I think
we should
listen to the experts, and so
far the experts seem to have
said thatall-seater
stadiums are the right
approach and we shouldnt
change anything unless
someone produced some
overwhelming evidence
[to the contrary]... But to me
football matches now are
about all-seater stadiums,
particularly when you
consider the size of the
crowds. I went to watch
my team, Villa, being beaten
eight-nil by Chelsea the
other day and when you
look around the idea of
replacing seats with standing
would have all sorts of
dangers so there are no
plans to do that.

special-needs school
after her two autistic sons
were turned away from
mainstream education.

What are the
Governments
priorities for children
with autism? Parents
need to hear something as
they cant see a light at the
end of the tunnel.
DC: We need to help
parents make choices. The
approach this government
is taking is much more
trusting of parents, saying
you should have more
choice in safe, special
schools and stopping
the closure programme,
which we did.
And then we want to put
more power in the hands of
parents, whether its through
individual budgets and
direct payments, so youre
in command. We are also
changing the statementing
process to make it more
inclusive of additional
things, other than education.
I just think the
idea of more
volunteering and
more communities
coming together to
fix problems the
more the better.

It may sound odd, but its something
you can make the night before to save
time in the morning, advises registered
nutritionist Dr Carina Norris, and its far
better than sugary cereals. And for a
hot start, just make a toastie. You can
keep it low-fat and its a good way to
include some protein a secret weapon
to sustain you through the morning.
Try egg and low-fat mayo, chutney
with a little low-fat grated cheese, or
low-fat soft cheese and a little smoked
salmon, all on wholegrain bread to up
your bre. Grab some fruit too.

Sitting in the same position at work, especially if youre slumped over your desk,
can lead to aches and pains, says Sammy. And being sedentary is bad news for
health. So keep moving little and often during your day (small breaks and simple
stretching recommended!) and youll reverse that C-shape posture. Make it
more fun by having a competition with your colleagues to see who can say
stretch time rst. Why not do it at 12pm and 430pm, too? Heres just one easy
stretch to try: standing or sitting, interlink your ngers behind your back and

Whether on the school run or your way to
work, get out rst thing, urges Sammy.
The light exposure helps set your body
clock so youll feel awake and sleepy at the
right times. Youll also be tting in some
exercise early on. You dont need to do a
30-minute session or get to a gym research
shows small bouts of exercise can be just
as effective. Try three 10-minute daily bouts
of exercise where youre breathing harder
than usual (like brisk walking) and youll
be getting the recommended amount of
moderate-intensity activity for adults for

as Diabetes UK? You could even take part
in a walk during Diabetes Week, 9-15 June

One of the best ways to lower blood
pressure and reduce your risk of heart
disease is to eat less salt, says Carina.
Check labels more than 15g salt per
100g is high*. Plus fruit can help
protect your whole cardiovascular
system (heart, lungs and blood
vessels), thanks to the antioxidants
they contain. So if hunger strikes
mid-morning, choose fruit over salty
snacks. Making tweaks like this to your
diet is easier and more effective than
setting yourself a vague goal such as
I will eat healthily. Together, theyll
help reduce your risk of developing
health issues such as Type 2 diabetes
and a stroke.

Whether youre waiting for the
photocopier or the bus,
standing presents a great body-shaping opportunity, says
Dean Hodgkin, tness expert at Energie Fitness Clubs and
spa Ragdale Hall. Clench your buttocks to tone without
anyone realising, he suggests. Also, lift one leg very slightly
off the oor, and x your balance this strengthens your
core muscles and pulls in your tummy (so you look slimmer
over time). If youre waiting for the kettle to boil, try some
squats. All these movements add up to big gains.

Get out!
We all mean to do it, but a break from
work at lunch is so important. Its an
ideal time to get some exercise and also
your ll of vitamin D. Around 10 to 15
minutes of daily sunshine on your bare
arms, which youll get walking around
outside, should be all you need, says
Dr Modgil. Just be aware that the time in
the sun youll personally require depends
on factors such as skin type, and dont
allow your skin to redden or burn.
Finally, it gives you a chance to get
away from your morning mentally, says
Dr Modgil. Find a quiet place even if
its for ve to 10 minutes and take in
your surroundings rather than overly
thinking. Such breaks (preferably mid-
morning and afternoon too) can have a
massive impact on mental health and
your ability to handle stressful events.

that kids who share family meals at least three times a week are more
likely to eat healthy foods and have good eating habits. It also presents

Try to ensure everyone gets a say you could even turn it into a game
with a conversation jar of topics or questions. And for an easy way to
eat a healthy dinner that wont increase your waistline, Fill up with
vegetables, says Carina. Have a protein portion the size of your palm,

says Sammy. Its about making sure your
body is supported correctly so it doesnt
twist and therefore strain your back, hips or
neck. Try this trick to ensure you start off in
the right position: if you sleep on your side,
place a normal-sized pillow between your
knees; on your back, place it under your
knees; on your front, put a pillow under your
tummy. Lastly, try to go to bed and get up
at the same time each day without making
it too early or too late, so you have a
consistent routine, and ensure you get the
optimal amount of sleep for you. Though it

need between six to eight hours.

Record breakers
A huge thank you to everyone who supported the
Tesco Charity of the Year partnership with Cancer
Research UK over the past year. The money is still
being counted, but Tesco says its set to smash
its record-breaking target of raising 10 million
in one year. This will help towards the goal of
beating cancer through early diagnosis. Of course,
the work Tesco is doing for Cancer Research UK
doesnt end there. Read on to find out how you

Food collection
In December Tesco launched its Help
Feed People in Need campaign, which
(including our 30% top-up) resulted in
enough donations to provide 24 million

groups. To get involved in our

Diabetes UK
Tesco and its National Charity Partner, Diabetes UK,
are raising funds for research that could lead to a

was diagnosed with Type 1
diabetes in August 2012 after
experiencing weight loss, extreme

hours, but at the same time I was relieved I
had an answer to what was happening to me.
I didnt have a clue about diabetes. Now Im
working out how to fit it into my life, rather than

300g (10oz) couscous
2 tbsp olive oil
1 tbsp ground cumin
1 tbsp ground coriander
1 tsp cinnamon
1 garlic clove, crushed
4 British lamb steaks
x 30g pack mint,
leaves picked
x 30g pack coriander
4 fresh apricots, sliced
100g (3oz) feta
75g (3oz) pomegranate
seeds
50g (2oz) pine nuts

1 Pour the stock over the
couscous, cover and leave
for 5 minutes, fluffing with
a fork after 2 minutes.
2 Meanwhile, place the
griddle over a medium-
high heat. Mix 1 tbsp of
the oil with the spices
and garlic, brush over the
steaks then chargrill for
3-4 minutes on each side.
3 Chop the herbs and stir
through the couscous with
the apricots and crumbled
feta. Season, scatter with
the pomegranate seeds and
pine nuts and drizzle over
the remaining olive oil.
4 Divide the couscous
between four plates and
top with sliced lamb.

Our stone fruit is grown in the
warm, sunny climes of southern
Spain, says Tany Natures quality
manager, Francisco Agudo.
Every step of our process is
overseen to ensure we grow
the best possible nectarines and
that they reach stores in great

are similar to peaches but have
smooth rather than fuzzy skins,
should still be firm with just a
little give and a sweet smell
when you buy them in store. So
maintaining that top quality for
Tesco, Francisco says, includes
making sure our fruit has a great
colour and sweet taste.
The nectarine season for
Tany Nature runs from May
until the first week of September.
Bearing
fruit
Throughout that period, says
Francisco, we provide specially
selected varieties of both white
and yellow-fleshed nectarines for
Tesco. These are the two main
types of nectarine: white-flesh is
typically slightly sweeter with lots
of aroma, and yellow-flesh has a
more balanced flavour thats
tangy and sweet. Enjoy nectarines
as you would an apple or try our
tempting dessert (see right).

Nectarines
Slice ripe nectarines in half
and remove centre stone, place
on a baking tray, cut side up,
and drizzle with a little light
olive oil or melted butter.
Sprinkle each half with half a
teaspoon of caster or Demerara
sugar and bake in the oven
(gas 4, 180C, fan 160C) for
25 minutes. Serve hot or cold.
Tip You can mix the sugar with
a pinch of ground cinnamon or
ground nutmeg if preferred.
Cook 200g mixed berries (this can
be from a frozen mix) with 25g
caster sugar. Cool then swirl with
300g Greek style natural yogurt.
Serve with the baked nectarines.

roasting. Rub the meat with oil,

Pork ribs Inexpensive and

and are fun for kids to eat. Rub
with Chinese five spice or add

Rack of lamb with
peperonata salad

1 Preheat the oven to
gas 7, 220C, fan 200C.
Season the lamb rack
and spread evenly with
1 tsp of the harissa paste.
2 In a food processor,
whizz 50g (2oz) of the
ciabatta to breadcrumbs,
then mix with 1 tbsp of
the olive oil and season.
Press onto the harissa
paste to form a crust.
3 Wrap the bones of
the lamb racks in foil to
prevent them discolouring,
then transfer to a baking
tray and roast in the top
half of the oven for 15
minutes, or until the crust
is golden and the lamb
is still a little pink, but
cooked through.
4 Meanwhile, prepare
the peperonata salad. In
a large bowl, mix 2 tbsp
of the olive oil with the
remaining harissa. For
the croutons, tear the
remaining ciabatta into
25cm (1in) pieces (use
about 150g/5oz of bread),
and add to the bowl with
the harissa mixture. Heat
a frying pan, add the
harissa coated ciabatta
chunks and fry over a
medium heat for 1-2
minutes, until golden.
Remove from the heat
and leave to cool a little.
5 In a bowl, combine the
roasted peppers, olives
and croutons. Drizzle over
the remaining olive oil and
scatter over the chopped
parsley. Toss until all the
ingredients are well mixed.
6 Remove the lamb from
the oven and leave to rest
for 5 minutes, covered
with foil, then slice into
cutlets. To serve, divide
the lamb cutlets between
4 plates and serve with
the peperonata salad.

1 egg

50g (2oz) butter, melted
125g (4oz) plain flour

strawberries, blueberries
or raspberries; peaches,

25g (1oz) caster sugar
2 tsp arrowroot
1 In a bowl, whisk the
buttermilk, egg, maple
syrup and melted butter.

2 Sift together the flour,
cinnamon, baking powder
and a pinch of salt into
another bowl. Tip half the
wet ingredients in and mix
well. Fold in the remaining
buttermilk mixture to form
a thick batter.
3 Heat a large nonstick
frying pan and wipe with
sunflower oil. Ladle some
of the mixture onto the hot
pan to make small pancakes

suns out properly
(or should be!)
there are plenty of
fresh ingredients
coming into
season, and just
as many wines queuing up to be
enjoyed with them. The crunchy
fresh flavours of early summer
green beans, watercress and fresh
garden peas can be mirrored
and complemented by white
wine grape varieties such as
Sauvignon Blanc or Austrias
Grner Veltliner, a grape that
makes restaurant sommeliers
swoon with delight over how
well it can go with food.
The above wines arent just
good with greens though, theyre
also perky enough for lightly
flavoured fish and seafood but
then Muscadet from the Loire
was a wine practically invented
to be paired with fish. Pink-
fleshed fish such as salmon and
crab are ultra tasty alongside
a slightly chilled Pinot Noir,
especially if theres chilli in the
recipe, and if not, a feisty ros
also works well.
If youre planning a barbecue,
lamb (see p105) is perfectly in
season now. Grilled simply, it
can go with lots of different reds,
and would be just as happy
alongside a spicy north Italian
red as it would a juicy Pinot Noir.
Asparagus and tomatoes are
in season, too, and although
theyre difficult to match
with wine, it can be done. To
enhance the taste of summer,
try a southern hemisphere Pinot
Noir alongside a herby tomato
salad or a Grner Veltliner with
some freshly steamed British
asparagus. Turn over for a few
more summer tipples to try.

My family really means
everything to me.
Without question, my
children Ludo and Iona
[now three and two]
are the most important
part of my life. You can
never truly understand
how important children
are until they arrive.
They kidnap every part
of you in a good way
of course! Also I think
children can bring
partners closer together

Dogs have always been
important to the Fogle family.
I met my wife walking one
her twin boys, but
fortunately we still get
to see her quite a lot.
Which family member
is most like you?
My son Ludo. Were
both a little shy and
reserved, but we try to
overcome that. Plus,
hes never happier than
when hes outdoors.
While I dont see the
resemblance, everyone
says we also look
identical. Were very
close. Which obviously
I am to my daughter too,
but I think the mother-
daughter relationship,
especially at this age,
can be a bit stronger. Im
close to my own father
as well, and were both
terrible when were ill!
Who can you rely on
to make you laugh?
Our dog, Maggi! Shes a
labrador-collie cross and
a real personality. Dogs
have always been
important to the Fogle
family. Theyre how I
met my wife, Marina
we were walking our
dogs in the park. Its
also how my mum and
dad met: Dads a vet,
and Mum took her dog
to him to be treated.
Whats your key to
enjoying family life?
We love the outdoors,
so either parks
in London or the
countryside. My perfect
day would be going
for a big walk together
along a sweeping
beach. It could be any
weather rain or sun.
Maggi would come,
too. Just sharing the
experience splashing
in the sea, digging in the
sand, feeling alive and
enjoying each others
company is what
makes it. I also cant
wait to be able to share
elements of travel and
exciting locations with
my children. When Im
away I miss my family
hugely but then theres
a fantastic reunion
when I get back.
Which family member
would you most like to
have with you if you
found yourself stuck
up a mountain?
My wife. She would be
the one person. Shes
also my best friend.
What might surprise
us about you?
My hobby is interior
design its my secret
passion. Ive designed
our whole house and its
a special treat for me to
go to furniture shops
and look around.
Whose family would
you join for a day?
The Beckhams. They
must be a fun family,
and youd have a dad
who is so cool! Imagine
David Beckham turning
up at your school sports
day it cant get much
better than that.
